Italy's award-winning crepes master Franco Pepe opened Kytaly in Geneva, Switzerland, a number of years ago, and this no.1 crepes have just landed in Hong Kong, and everyone can eat this No.1 crepes without flying to Europe.
Chef Pepe comes from a family of noodle makers, whose generation has won numerous awards, and his own restaurant Pepe in Grani won the first place in the "50 Best Pizzas in Italy" in 2017 and 2018. His uniqueness lies in the creation of unique, airy pancakes, breaking through the traditional napoli pancakes on the family recipe, 70% of the dough used in this pancake is water, fermented overnight, baked at a very high temperature of 450 ° C for 90 seconds, the edge of the pancake is swollen like bread, and the bottom part of the cake is slightly crisp with smoke and soft taste, which is very different from the pancakes in the workshop.
The most expensive style is $300
The head office sent a pancake chef to the Hong Kong store to ensure that the standard is in line with that of Geneva. As for the ingredients for making crepes, 99% are shipped from Italy, many of them are very advanced, such as a variety of DOP proven cheeses, mediterranean canned fine tuna, Riccio tomato sauce prepared by a special Italian farm, the water is filtered with a special water filter, the rest of the ingredients are all organic goods, the cost is extremely high, you get what you pay for, the most expensive crepes are priced at $300, so the material is not overcharged.
Chef Pepe created a different Margherita pancake, only buffalo cheese and olive oil are added to the baked pancakes, and then add Riccio tomato sauce, concentrated fresh basil leaf sauce and extra virgin olive oil to the noodles, etc. When eating, tomato sauce and basil leaf sauce contrast with hot and spicy cheese, the entrance is more explosive, and the taste is more harmonious. The only pity is that Hong Kong's Kytaly only offers a few appetizers, more than a dozen crepes and small desserts, and less famous spaghetti from the Geneva store.
