Method:
1. Take an appropriate amount of water, add sugar and sake, boil over low heat to let the alcohol volatilize, then add mirin, soy sauce, green onion, garlic, onion and bonito and cook for about 10 minutes, filter out the sauce, and then cook over high heat until thickened.
Tips: Bonito will have a fishy smell if it is boiled for too long, so the ingredients are strained out before the sauce is boiled until it is concentrated.
