Kilchoman Distillery, located on the Isle of Islay in Scotland, is the first new distillery in Islay in 124 years. In 2005, the ground was broken for Qihoumen, and on December 14 of the same year, the first barrel of wine (Cask No 1) was poured into Qihoumen, and it was matured in the cellar.
In 2012, Qihoumen launched a limited edition of Sherry Cask Release, an unvintage, non-aged sherry casket, which is fully aged in Oloroso sherry casks. In 2013, the wine was renamed Loch Gorm and transformed into a limited-edition series of unvintage, age-free wines.
Lake Gem is located next to Rockside Farm, where the Qihoumen Distillery is located, and was named Lake Gem because of its dark, pea-like dark water, which is similar to the color of the wines in this Qihoumen wine series.
Because all the wines in the Gem Lake range are also matured in Oloroso sherry casks, they are all darker in color. At the same time, Gem Lake is the only pure Oloroso sherry cask in all the Qihoumen collections.
Lake Gem is an annual batch series, one or one batch per year, each batch is a blend of multiple barrels of Oloroso sherry casks matured at José y Miguel Martín Winery in Spain, with an alcohol content of 46% ABV, a capacity of 700ml (750ml for the US version) and a peat phenol value of 50PPM. By 2023, 11 wines have been launched in the Qihou Mengam Lake series.
On April 22, 2024, Qihoumen released this year's Gem Lake Liquor, which is a blend of 23 barrels of Oloroso Sherry Butts distilled in 2014 and bottled in 2024 with a bottle capacity of 18,000 bottles. Like all previous wines in the collection, this wine is uncoloured and unfiltered.

At present, the 2024 season of Gem Lake is the first to be launched in the UK and Europe, with an official suggested retail price of around £80.
