Better tools make good work.
After 10 years of cooking, I realized that it was not that I was not good at cooking, but that the cooking tools were not good. Take the simplest example: stir-frying on an induction cooker is not as delicious as a gas stove. In the same way, if the gas stove is not good, the fried food will not be delicious.
I haven't done anything else in these years, but the move is in full swing. Every time I move, I can come across a new gas stove, which also makes me summarize the characteristics of 5 difficult gas stoves.
.01 multi-eye foci
The common household gas stoves in life are two-eye stoves, and later I learned that foreign gas stoves are multi-eye stoves. So I thought: Why can Chinese people only use castrated eye stoves?
So in the first house I renovated, I spent a lot of money to buy a multi-smoke stove. It was later discovered that the "double eye stove" was not a castrated version, but an upgraded version. Multi-eye gas stove is really not suitable for Chinese food:
(1) There are more stove eyes, but the total size has not changed. As a result, the size around each stove is so small that the cauldron can't fit in at all. The small pot can barely be used, but don't even think about the "spoon".
(2) The intake of natural gas is fixed, and the more stove eyes, the less firepower of each stove hole. How unpalatable it is to stir-fry on low heat, I will talk about it slowly.
.02 Small fire stove
I am using a small stove now, and when I lift the gas stove off the countertop, I can see the fire on the side
My house is only 4.0kW, and most gas stoves on the market have a power of more than 4.5kW, and can reach a maximum of 5.2kW - the more power, the more fire.
Many dishes in Chinese food need to be "stir-fried", and they cannot be stir-fried if the fire is not strong. And the fire is low and cooking will be very slow, other stoves can boil a pot of water in 3 minutes, but I have to wait for 10 minutes, which is very delayed.
Subjectively speaking, the rice made by the small stove is sticky. For example, when stir-fried vegetables, they are sticky and soft, and they will never have a crispy texture. Stir-fried meat is the same, and it is impossible to achieve the taste of "charred on the outside and tender on the inside".
.03 Fierce Fire
Since we have been talking about the firepower of gas stoves, can we just buy a fierce stove?
The so-called fierce fire stove is actually a modification of the fire cover, which makes the flame more concentrated. Merchants say that it can achieve the purpose of "saving gas", and my experience tells me that this statement is wrong.
During use, the blazing stove will produce a loud noise. You've all been to the back kitchen of a restaurant, and the fire in the back kitchen is always whirring, and this sound is also produced when the stove is working.
As for the "fierce fire", I didn't feel it, because the size of the stove in our house is relatively small, and there is no way to insert the whole pot into it like a restaurant. As a result, although the fire is concentrated, it cannot heat the entire bottom of the pot, and the actual effect is not good.
.04 Cast iron stove
Every time someone asks me "how to choose a gas stove", I will first say: choose a pure copper stove, not a cast iron stove. Over the years, I have used too many cast-iron stoves and gas stoves to save money.
The biggest problem with cast iron is that it is easy to rust, and it is a thick layer of rust, just like this▽
At first, this rust will clog the air outlet, resulting in an uneven flame. I'll show you another picture - the flames everywhere else are blue, only reddened and yellowish in some places, because the gas outlet here is blocked by rust▽
If you use it for a longer time, the rust will fall and slag will fall down. The cracks deep in the stove were full of iron slag, and there was no way to get it out. The cast iron stove is dirty all year round, in fact, it is not that the owner is lazy, but that it cannot be cleaned at all.
.05 Low energy efficiency gas stoves
All appliances have an "energy efficiency rating", and gas stoves are no exception. Other household appliances can choose secondary and tertiary energy efficiency in order to reduce the purchase cost, only gas stoves must choose primary energy efficiency.
Class 1 energy efficient gas stoves not only save natural gas, but also have two benefits:
(1) The flame of the first-class energy-efficient gas stove is lower and stable, and will not wrap the pot body, and it is not easy to blacken the bottom of the pot, and it will not burn the handle of the pot. The flame of the second- and third-level energy efficient gas stove can be more than ten centimeters high
(2) The first-class energy-efficient gas stove not only has strong fire power and sufficient combustion, but more importantly, it has high thermal efficiency. If the thermal efficiency of a 5.0kW gas stove is 50%, only 2.5kW of heat will be transferred to the pot, but if the thermal efficiency is 60%, 3.0kW of heat will be transferred to the pot - so whether the fire is strong or not is also related to the energy efficiency level.
