I often see people on the Internet saying that stainless steel with magnetism is fake, and stainless steel tableware without magnetism can be used.

In fact, stainless steel has no magnetism, it is nothing more than that the internal metallographic structure is pure austenite, and there is no ferrite or martensitic structure, so stainless steel has no magnetism.

Generally speaking, stainless steel with relatively low carbon content (less than 0.05%), chromium and nickel content of about 18% and 9% respectively, is easy to become pure austenite. Austenitic stainless steels are not magnetic.

If the chromium and nickel content remains the same, and the carbon content is only increased to 0.1%, such stainless steel is prone to ferrite. Stainless steels with ferrite are magnetic.

Therefore, there is no scientific basis for judging the authenticity of stainless steel by whether it is magnetic or not.

Moreover, austenitic stainless steel is relatively soft, so it is not suitable for kitchen utensils such as kitchen knives, drills, and abrasives. Therefore, stainless steel used to make kitchen knives, crushers and other kitchen utensils generally has to increase the carbon content to improve its hardness, or use martensitic stainless steel. This kind of stainless steel is magnetic.

Therefore, the magnetic stainless steel is not necessarily the production plant cutting corners to shoddy, but in order to meet the use of kitchenware and deliberately choose this kind of stainless steel.
