For example, the sweet rice candy ~ a small piece, the material is solid, crisp and sweet. So the question is, how is this rice candy/fried rice made?

Pujiang handmade rice candy
The rice candy on a certain treasure is made of glutinous rice, rice, and millet. Here, taking rice candy from Pujiang, Sichuan Province as an example, glutinous rice is used, washed and soaked, and then steamed. Then, after natural drying, the rice dough is dispersed and sifted, and the pieces are distinct, and they become cooked rice grains.
It is then mixed with syrup, lard, and sometimes nuts such as peanuts and sesame seeds, and stir-fried over low heat. My hometown calls rice candy fried rice, which may be named according to this step~
Then put the fried raw materials into vegetable oil and fry them. Pay attention to the heat in this process, so as not to be fried to brown and black, white and crispy is the only answer~
Then mix the sugar solution with the fried rice, sesame seeds, and peanuts evenly, and pour them into the box.
Roll it out and press it tightly, and it will be flat and neat.
Wait for the heat to dissipate before cutting. If you wait until it has completely cooled down before cutting, it will easily make the crunchy rice candy collapse in one piece.

Old-fashioned rice candy maker
I also found an old-fashioned rice candy machine, because it was a video from more than ten years ago, so the pixel is relatively low, but it can also be viewed. In the blender is fried and fried glutinous rice, and maybe peanuts, melon seeds, or something. Pour in the prepared hot syrup on top.
Lie down in the hopper, take out the mixture, pour it into the mold while it is hot, and spread it out.
Roll back and forth, roll flat and compact.
The pressed oversized pieces are sent to the machine to cut strips and dices (a video of the shaqima is used here, but the process is the same).

The rice candy on it is square, but we've all seen cylindrical rice candy, right? There is no trace of the rice grains on the edge of the cut, and they are cylindrical.
So how is this done? Change factories and witness the production site~ First of all, it is to boil syrup.
Add the boiled syrup to the hopper and add it to the rice later.
Combine well in a mixer and mix well.
Ready-to-do shaping.
Make a long strip first, don't care about the details, just reach the length, and then use the pole to push it into the front drum groove.
A few rollers will round the unformed rice flowers, roll over, glutinous rice flowers!
This is the rolled cylindrical rice candy, which is very round. Several pieces are put together and sent for cutting~
Push the rice candy into the cutting mechanism, and the circular saw will cut them into small pieces. Adjusting the gap of the circular saw allows you to cut out different lengths.
