What is the Zhengshan Race? The difference between the Zhengshan Race and Jin Junmei

1. It is a small seed craft black tea produced in Zhengshan, which is a small seed of Zhengshan. Zhengshan generally refers to the Wuyi Mountain Nature Reserve, which covers an area of about 600 square kilometers. There is a village in this reserve called Tongmu Village, which covers an area of about 280 square kilometers and has 12 groups. In addition, there is a Tongmu Pass at the junction with Jiangxi, so many people say that the Zhengshan small species is how the Tongmu Pass is, and this is how it came.

Zhengshan Xiaozhong Black Tea, also known as Lapu Mountain Xiaozhong, tea is smoked with pine needles or pine wood, and has a very strong fragrance. Because of the smoking, the tea leaves are black, but the tea soup is dark red. Zhengshan Xiaozhong Black Tea is the oldest type of black tea, and it is perfect for curry and meat dishes. Later, on the basis of Zhengshan small species, kung fu black tea was developed.

Please see the following points for the difference between Zhengshan Species and Jin Junmei:

First of all, Jin Junmei and Zhengshan Xiaozhong are a family. Jin Jun Mei is a branch of the Zhengshan small race, which was successfully created by Liang Junde in 2005.

Secondly, Jin Jun Mei was originally produced by a tea company, and after achieving market success, it was mass-produced by tea companies around the world. Now it is generally believed in the tea industry that the raw material for the production of Jin Jun Mei is the tea bud head on the wild tea tree of "Zhengshan" in Tongmuguan, Wuyi Mountain, and then made by the latest improved production process, it can be regarded as authentic Jin Jun Mei. And the taste difference between the Jin Jun Mei of Tongmuguan and the Jin Jun Mei of other real estate is very large. Due to the weathered half-rock and half-sand soil of Tongmuguan, coupled with the good ecology and climate, the tea buds produced have a quality that cannot be matched by other origins.

1. Compared with the traditional Zhengshan small black tea, Jin Jun Mei has the following characteristics:

(1) Shape: less fluff, tight and thin, thick and heavy;

(2)色泽:金、黄、黑相间,色润;

(3) Aroma: compound flower and fruit aroma, honey fragrance, alpine rhyme fragrance is obvious;

(4) Taste: mellow, sweet and smooth, long-lasting alpine charm;

(5) Soup color: the soup color is golden, rich, clear, and has a golden circle;

(6) Leaf bottom: golden needle-shaped, even, plucked, bronze;

2. Jin Junmei and Zhengshan small black tea have the following differences in the production process:

(1) The withering time is shorter than that of Zhengshan small species, and the tea green and the original bright green turn to dark green, which is considered to be mature.

(2) The fermentation time is shorter than that of Zhengshan small species, and it will not produce the unique honey fragrance of Junmei like the usual Zhengshan small species.

(3) Drying is the most critical, the traditional Zhengshan small species should be smoked with pine branches, and Junmei has not gone through the process of smoking with pine branches except for a small part of the smoke in the withering process.

Zhengshan small black tea grows in the Wuyi Mountain National Nature Reserve, a "World Natural Heritage Site", known as the "Kingdom of Snakes", "Bird's Paradise" and "Gene Bank of Biological Species". The tea plantations are scattered in the foothills of Huanggang Mountain in the Wuyi Mountain Nature Reserve, with an average altitude of 800~1500 meters, a large temperature difference between day and night, an average annual temperature of 18 °C, and an annual rainfall of about 2000 mm. The average annual relative humidity is about 80%, and the carbon dioxide in the atmosphere contains only 0.026%. It has the climatic characteristics of low temperature, precipitation, high humidity and long fog days, and these superior natural climate and geographical environment have created unique ecological conditions for Zhengshan small black tea.
