01 Observe appearances
Fresh shrimp clams are blue and shiny in color, their eyes are clear and not cloudy, and their backs are arched, and their tails remain open.

02 Judgment Mother
In general, it is better to buy female shrimp clams because there is more meat. The shrimp clams can be reversed, and if there are three white horizontal lines near the neck, it is indicated as a female shrimp clam.

03 Pinch the shrimp body
Try to pinch the shrimp clam, if the meat is firm and elastic, it means that it is of good quality.
04 Look at the shrimp paste
After selecting the female shrimp clam, lift it up to the light and observe whether there is a line connecting the abdomen from beginning to end, which is a delicious shrimp paste.
Shelling tricks
1. Using scissors or other tools, cut off the head of the shrimp clam.
2. Cut off 3~5 mm with scissors on one side of the shrimp body, and you can see the shrimp meat.
3. In the same way, cut off the other side of the shrimp clam's body.
4. Starting from the head of the shrimp clam, slowly uncover the shell of its back. Pay attention to the speed not too fast, otherwise the shrimp meat will stick to the shrimp shell.
5. Slowly uncover the back shell until the tail, and gently lift the complete tail when you see it.
6. Starting from the tail of the shrimp clam, slowly peel the shrimp meat off the shell of the abdomen to obtain the complete shrimp meat.
