More than 80% of the ingredients in the "coastal kitchen" come from more than 50 local Norwegian suppliers, transported through 15 of the 34 ports visited by cruise ships.

Here, enjoy the Arctic red-spotted salmon that melts in the mouth of the Western Oron Islands, the award-winning cheeses of Aalan Gård in Lofoten, and the juicy king crabs from the Troms and Finnmark regions.

Øistein Nilsen, the head chef of Haida Luther's "Coastal Kitchen", is a boy born in northern Norway who spent most of his childhood exploring nature and appreciating the freshness and flavors of food from the wild.

As Chef, he brings his vision of locally sourced cuisine to cruises on Norway's West Coast, while also supporting local talent, ingredients and suppliers.

Alain Farms is one of the few goat farms in Arctic Nordland County. Here, the farmers Tove & Knut Åland run a thriving ecological farm to spread the word about handmade products.

There are 200 dairy goats, 70 baby goats, a cow, a horse, a farmhouse, a dairy, a herb garden, shops and cafes. Their own small family has grown, with seven children, a dog, a cat and a pet pig!

Real family visit

The success of the family-run farm run by tow and the Cnuts is partly due to the tourists. Thanks to the partnership between The Coastal Kitchen and Alain Farms, visitors will have the opportunity to visit the farm on an optional excursion. See the dairy factories full of cheese and enjoy the fragrance of the vanilla garden. Baby goats can also be seen on the farm, while adult goats are grazed on the nearby hillsides.

On this optional excursion, people from all over the world can share the pride and joy of Tov and Cnut. "We will warmly welcome you to visit the farm," Toff said eagerly. "First you will see shops displaying the various products produced on our farm." She gleefully introduces, "Next, we will show you how our herbs, cheeses and spices are collected and made. ”

Enjoy coffee and homemade cakes in a charming café decorated with heirlooms, and visitors can also learn more about the farm's history from the couple. "We are really excited to invite guests from a Norwegian West Coast cruise ship to our home and chat with them about our home," Tov said with a smile on his face. "It's amazing that they can meet locals like us, hear our stories, and experience real life on a real farm in Lofoten."

As part of the West Coast Kitchen theme, Alain Farms also ships its award-winning cheese, spices and tea to cruise ships. Providing food based on fresh ingredients is another way for "coastal kitchens" to strengthen ties with local businesses and support the families they depend on.

Cnut said excitedly: "Tov and I like the idea that guests from All over the world, from Germany, the United States, Japan and other places, have seen the amazing scenery of the Norwegian coast, maybe the midnight sun or the Northern Lights, and at the same time enjoy the cheese from our farm and taste our tea." It stems from wanting to show people what we have around us, to get food in different ways, not just to go to the supermarket.

It is traditional common knowledge to get milk from dairy farmers or meat from elk hunters. Use seasonal ingredients. The less you have ingredients, the more creative you are. Therefore, it is easy to design dishes without importing vegetables.

The term "retro" is used to describe her cooking method, meaning to develop the future in retrospect. Therefore, applying both old and new methods and techniques to work has an interesting food pantry as a starting point for cooking.
