Ordos wine culture: from deducting three respects to two to total scores!
Ordos wine culture: from deducting three respects to two to total scores!

Wine accompanies the Ordos people through all stages of birth, marriage, death, etc., enriching the Ordos culture with deep cultural connotations and nourishing the land of Ordos. The rugged and brash Ordos people believe that there is no wine and no table, drinking when happy, drinking when in pain, drinking when they are together, and drinking when they are parting, and wine is one of the most important components of Ordos's life.

Blue skies, turquoise grasslands, black coals, white clouds, no matter how you come to the grasslands, hospitable Ordos people always welcome guests from all over the world with the most solemn toast. This is the first hurdle that the newcomers to Ordos have to pass, the toast ceremony of Mongolian culture. When you walk into the yurt and taste the Ordos cuisine, the wine is in full swing, the large piece of meat has just been imported, and suddenly, the singer holding Hada in his hand and entering the yurt with a silver bowl. Starting from the most honorable guests, the long pastoral songs, the blue hada, the pure wine, the grassland songs that are like a natural sound, make the people who have just arrived in Ordos not drunk and drunk themselves. At this time, the first wine culture in Ordos appeared, calling the song continuously drinking. It belongs to the dialect, which means the end, that is, the song cannot stop until the end of the drink.

When the foreign guests took hada and picked up the silver bowl, in the face of the gentle and beautiful singing, such a warm Ordos-style hospitality, they could not help themselves, as if drunk, the whole person was confused. Often take the silver bowl, no matter the amount of wine, excitedly drink it. But he didn't expect that he had just finished drinking and then filling it up. Drink it dry and fill it up again. So back and forth, the visitors were very puzzled. In fact, he has long been caught in the "trap" of Ordos wine culture".

Jurisprudence has a presumption that all people are presupposed to know the full content of the law and therefore do not recognize the so-called "he who does not know is not guilty". And so on, you can't say that you don't know the custom of ConstantLy Drinking in Ordos Singing, you can just push back and don't drink, you can only "go to The Hudi and follow the HuLi". When you finish drinking it, it means you can drink, so keep drinking until you are drunk on the prairie.

There have been ancient songs for wine, but there is no custom of singing and constantly drinking. The author verifies that in the past, when Mongolians drank alcohol, they must sing and dance. For example, the host sings a toast to the guests, which can be drunk or not. If you don't want to drink, you can go back to the song. So, a glass of wine is sung back and forth many times before it is finally drunk. This is also "do not try to drink wine to be prosperous", and the Mongolians on horseback are all good singers. But later, with the development of the modern tourism industry, in order to show the emotional expression of hospitality and enthusiasm, such as the most famous Yi "alpine flowing water" in Yunnan, it adopted such a custom of singing without stopping and drinking to welcome tourists, and the effect was very good. Influenced by this, with false rumors, there is a similar ordos song that continues to be produced.

When you first come to Ordos, face the high song wine and Hada, take the silver bowl, ask for "three bullets", dip the wine with the ring finger (remember that it must be the ring finger), and hit the sky, which means to respect the heavens. The second bullet of the earth means reverence for the earth. If there is a stove, the three-bomb stove means to salute the fire. If there is no stove, gently wipe it on the forehead, which means to honor the ancestors. Then, only a small sip, the song ends, a drink is exhausted, is to accurately grasp the Ordos wine culture.

Why the "three bombs"? It is said to be related to Genghis Khan. Wine is a genetic retention of Dukan, and can relieve all sorrows. Wine has a long history in the Central Plains, and it is not clearly recorded when it can be made and drunk into Mongolia and the Ordos Plateau. However, from the current archaeological point of view, the Han Dynasty has already appeared in Ordos and the northern part of the desert. By the time of Genghis Khan's Yuan Dynasty, drinking alcohol was already a common phenomenon among the various tribes of Mongolia. According to legend, the "three bombs" were handed down from the time of Genghis Khan. Genghis Khan had two beloved treasures, a wrench made of ivory, which was worn on the thumb of his right hand as a hook string for archery. The other is a carved silver wine glass that is used every time you drink.

Genghis Khan's brother Zamuhe, whom he had worshipped since childhood, saw Genghis Khan's power growing stronger and stronger than his own. In order to seize the rule of the Mongol tribes, he had a plan to repeat the same trick (Genghis Khan's father was poisoned by the Tatar Ministry with poisoned wine), and poisoned Genghis Khan with poisoned wine. Zamuhe secretly co-opted Genghis Khan's enemy, Iragu, the aunt of the Tatars, and invited Genghis Khan to a feast at AlatanBoleg on the lower Krulen River in the name of marrying and allying himself with the Tatars. After Genghis Khan received the invitation to reconcile, he did not know whether it was true or not, but he decided to try it, but he also kept his eyes on his father's experience of being poisoned by poisoned wine.

When the period arrived, Genghis Khan came to AlatanBoleg as promised. As soon as he got off the horse, Iragu held the wine in his hand and very humbly handed it to Genghis Khan and said, "Before, it was the Tatar Ministry's fault that made you and I make a big fuss." Now you and I are brothers, and we do not remember our past enmity. Genghis Khan smiled magnanimously and took the wine glass, and Shunshi stretched the ivory wrench of his thumb into the wine, who knew that the snow-white ivory wrench immediately changed color. It means that the wine is poisonous. Genghis Khan was shocked at first, and then immediately calmed down. He raised a glass in his left hand, and the ring finger of his right hand flicked lightly into the air with wine, saying, "How can I drink first?" Our Mongolian tribes are blessed with eternal life, so that life can be so rich. This cup of wine, first toast to heaven. He said, spilling the whole glass of wine into the air. Iragu hurriedly poured the second cup, handed the wine glass to Genghis Khan with trembling hands, and said, "Great Khan, you still remember your former vendetta." With the magnanimity of an eagle, please spare the Tatars, and we will always be united. Genghis Khan casually took the wine glass again, and then extended the wrench finger into the wine. Genghis Khan dipped his ring finger in the wine glass again, and the wrench became gray and black, and Genghis Khan flicked gently into the grassland, and then said: "The fertile earth has nourished us steppe children and strong cattle and sheep, and this cup of wine is dedicated to this sacred grassland." When he had finished, he sprinkled the wine on the grass. Zamu looked a little flustered and motioned for Iragu to pour another cup. Iragu forcibly handed the third cup of wine to Genghis Khan and said, "You are the hero of our steppe, and this day is also honored, and the earth is also honored, and the third cup is honored to you." Genghis Khan took the wine glass and lightly dipped a drop of wine with his wrench finger, which had turned black. Genghis Khan said: "You and I are all descendants of the Mongols, we are of the same ancestors, this third cup of wine to honor our ancestors, may our brothers be of one heart and one mind, and unify Mongolia." After saying that, he wiped it on his forehead, and then spilled the wine on the grass. Then he said to his retinue, "Take my wine glass, and I will drink with zamuhe and Iragu, and unify the steppe after the alliance." Zamuhe and Iragu knew that Genghis Khan had come prepared and did not dare to persuade them again. Change into good wine and drink three glasses with Genghis Khan. Genghis Khan saw through the mind of the Tatars. After returning to the tribe for several months, the war to conquer the Tatars broke out. The custom of experimenting with poisonous liquor has been lost with the dust of history. However, the custom of respecting heaven, respecting the earth, and respecting the ancestors has been passed down from generation to generation to this day.

A word as old as sanjing is the blanket tent. Ordos people drink, and often say a sentence, this is so-and-so's blanket tent or this is my blanket tent. The word blanket tent is derived from one of the names given to yurts by Mongolian herders. The yurt is not called by the Mongols themselves, but after the Qing Dynasty entered the customs, the Manchus called the house where the Mongols lived as the Mongolian bag, which has been passed down to this day. So before the Qing Dynasty, what did the Mongols call their houses? Called blanket tents, tents, felt bags, etc. Because the main material of the yurt is a blanket or felt, the blanket refers to wool and other woven products, and the account means home or house. Therefore, Genghis Khan called his people the people of blanket tents. However, the old Chinese name for the yurt is called the dome, "the sky is like a dome, the cage covers the four fields" is derived from this. After the Han people who walked the west exit entered the Ordos grassland, they all built temporary huts. After the integration of the Mongol and Han nationalities, the Han brothers often went to the Mongolian yurts to drink, and when they asked for a third person, they always said that you came to the blanket tent of so-and-so. The word blanket spread. Blanket tent specifically refers to a certain person's yurt, and generally refers to the liquor bureau organized by so-and-so.

One of the more popular wine cultures in the modern blanket tents of Ordos is called buckle three respect two. Three glasses of wine are placed in a wine tray, the toaster or the host drinks three cups themselves, and then gives two drinks to each of the toasted person or guests. Why deduct three? This is because in Chinese culture, "three" has a special meaning. Chapter 42 of Lao Tzu's Tao Te Ching says, "The Tao gives birth to one, one life to two, two to three, and three to all things." "Three" represents all things, which shows the profound meaning of those three glasses of wine, representing love, friendship, family affection, and all other emotions. Therefore, in Chinese culture, it is called three things, three lives are lucky, one is against three, and so on. For example, the twenty-second time of "Dream of the Red Chamber" said: "Jia Mu also knows that Jia Zheng is alone, and after three rounds of wine, he picks jia zheng to rest." The so-called "three tours" are three times. The host pours wine for each guest once, such as a tour of the city, pouring three times, it is called "wine over three tours". The saying "three rounds of wine" probably originated after people ate around the table. Before the Tang Dynasty, people ate by sitting on the floor, each with a set of utensils, and eating separate meals. The participants in the banquet each have a table, and everyone sits scatteredly, and there is no sense of "tour" to pour wine for it. With the introduction of the Hu bed (a kind of high-foot folding chair) to the Central Plains, people had high stools, for which they gradually invented square tables, everyone sat around the table, and toasted to have a "tour of the city" feeling. The modern round table only appeared after the introduction of Western culture and furniture into China, and there was only the feeling of "touring", without the meaning of "city", because the city was square rather than round. In view of this, "three" can be described as a long history in wine culture.

Why buckle three to respect two, but not four or three? Because in Chinese culture, three is singular, although it contains "all things", but it conflicts with the Chinese even culture of "pairing into pairs", "good things into pairs", and symmetry between left and right. For example, our gifts are all even numbers, and the number of relatives sent and married is even, and there are few odd numbers. Therefore, the buckle of three respects and two basically combines the traditional Chinese number culture. As for the buckle of three respects and two accompaniments to one, it is precisely the most appropriate expression of "one life two, two birth three, three life all things". The buckle of three respects is also the most honest expression of the Ordos people, drinking one more and drinking only two cups for guests. Buckle four respect three, buckle five respect four, etc. can only be said to be an extension of the buckle three respect two, which has the meaning of spelling wine in it, and there is not much cultural connotation.

Parallel to the three keiji are not singing and not drinking and guessing the fist order. Before the reform and opening up, wine was definitely a luxury, and it was difficult to eat enough at that time, where was the use of excess grain to make wine? Therefore, at that time, wine was only put on the table on important festivals such as weddings and funerals, and New Year's festivals. Wine flew into the homes of ordinary people after the 1980s, and with the improvement of living standards, wine culture gradually entered ordinary people's families. When relatives and friends gather, there will be wine to help. In the countryside, a plate of rotten pickles is drunk. Half drunk, he began to guess the fist to help him, and the dialect called the fist. In the quiet countryside, if anyone's house is noisy, there must be guests coming to drink and help. Cities and rural areas are different, there must be songs when there is wine, and there must be women who have songs, commonly known as "drinking flower wine". The female owner of the restaurant will sing two duos, mandarin tunes or popular songs, and if you can sing some love songs or yellow songs, the business is very good. At that time, there were no big hotels, small restaurants had one or two tables of guests, and the landlady or the beautiful woman at the same table sang two voices, attracting people from half the streets and alleys to watch. In those days, everyone called this phenomenon not singing or drinking.

Rural boxing or urban non-singing and not drinking seems today a bit "vulgar", and this roughness seems to be incompatible with urban culture. Around 2000, a culture of "proposals" began to emerge at the banquet. The proposal is a milestone in the transformation of Ordos city wine culture from "customary" to "elegant". Whenever they meet, the organizers first propose to explain the purpose, significance and importance of organizing this wine fair. Subsequently, proposals are made according to position, closeness, distance, etc., and equal respect is given to all those who participate in the banquet, so that everyone has the opportunity to express. The scene of loud roaring is gone, followed by gentle and elegant speeches, some talking about the development of current affairs, some introducing their own work, some telling social passages, some reciting poetry, some singing and dancing, it can be said that "eight immortals cross the sea, each shows their magic", everyone is suitable for personal talent, and it has become a wine stage and a talent to sing. This situation lasted for about 15 years, and a wine culture called total score appeared.

The total score is always a proposed upgrade. If the proposal is likened to a speech, then the total score is always the paper. There is a writing method for writing essays called total score total, and I think your high school teacher has also told you about it. The first time, the argument was put forward at the beginning, straight to the point. The second sub-division is a number of sub-arguments and arguments. The third summation extends the argument. Correspondingly, you will find that the proposal of the total wine culture of Ordos is similar to this. First, introduce yourself, who is the person, what profession. The second division is to tell the relationship with each person, flattering words, touching stories, and so on. The third time, I hope to help each other, thanks to Yunyun and the like.

Some people refer to the total score as the intangible cultural heritage of Ordos City, which is a fallacy. Let's first understand what is material cultural heritage, for example, the Forbidden City is material cultural heritage, it is a kind of historical objective material existence there. What is intangible cultural heritage, is not the heritage of material culture, you such as rolling felt, this kind of felt-producing product production process, is intangible, through hundreds of years passed down. Now UNESCO now evaluates the world's tangible cultural heritage every year, as well as intangible cultural heritage. Cultural departments at all levels on the mainland also evaluate intangible cultural heritage, such as the hangjin flag guru song and the sacrifice of Genghis Khan's mausoleum, which are typical intangible cultural heritage. If Ordos had insisted on drinking alcohol by 2122, it would have been impossible to declare an intangible cultural heritage. But today, this wine culture ceremony cannot be called intangible cultural heritage.

How does the total score come about? Who first proposed it? It is no longer possible to verify. Just like who invented Bitcoin, it will always be a mystery. There must be a lot of people who call him the inventor of the total score. But I think there are two points that can be verified. One is that the total score is always a proposed upgrade. The second is that the total score is related to the amount of alcohol in Ordos. It presumably forms a process that proposes to evolve the hierarchy of components and introduce a total score for fairness. Before there is no total score total ceremony. It was fashionable to propose at that time. The proposer is very casual, according to the level of the position of the whole table, the distance and proximity of relatives, such as first respecting ethnic minorities, then respecting female compatriots, and then dividing people in turn, everyone calls this way of toasting "who takes the hoe and who sets the seedlings". As a result, you'll find that the toaster has a lot of discretion. He can drink only 3 cups in three levels, or he can drink 9 cups in nine levels. In this way, it is very unfair, some people drink more, and some clever people drink less. Later, for the sake of fairness, someone invented this total score method. The greatest benefit of this custom is fairness. So why is the total score total? Instead of the total score, the total score and other methods? After several practices, I found that this is related to the amount of alcohol the Ordos people drink. Based on a table of 10 people, 10 people drink, a total of 1 toast drink 1 cup, nine times to drink 9 cups, a total of 1 cup, subtotal 11 cups. The remaining 9 people toast, and the first toaster must drink 3 cups per program, subtotal 27 cups. Both total 38 small cups. The 38 small cups are basically a bottle of wine, which is the average amount of alcohol in Ordos City who enter a slightly drunk state. It can be seen that the total score design is a very scientific drinking custom.

Another Ordos wine culture that may have more story connotations than the total score is called frequent coming and going, but this custom is little known. From June 2 to 4, 2006, Wen Jiabao, then Premier of the State Council, visited Ordos City and Baotou City. On June 2, Wen Jiabao went to Shendong. On June 3, he successively visited Ordos Group, Ordos Kulungou Sea Buckthorn Base and Mengniu Ordos Breeding Base. Originally, according to the original itinerary route, during the inspection, Premier Wen Jiabao only conducted research in three peasant households passing through the Khan Trench Village of Kangbashidar, the Evergreen Village of Dongsheng Tara Trench Town, and the Wugudi Village of Dalat Banner Forest. However, Premier Wen Jiabao has a habit of researching, in addition to taking the original route, he likes to stop and visit at any time. Coming out of mengniu group's milk supply base in northern Xinjiang Sanhe dairy farming base, Wen Jiabao saw two farmers weeding, so he asked the driver to temporarily stop. Premier Wen Jiabao walked toward the peasants. The entourage said that this is Premier Wen of our State Council. The peasant shook the prime minister's hand and said, "Know, know, have seen it on television." Premier Wen Jiabao learned from the peasants about the purchase price of silage and the income of migrant workers. When Wen Jiabao asked this peasant what difficulties he had, the peasant said, no, no, we peasants have paid the imperial grain state tax for more than 2,000 years since the Han Dynasty. The crowd laughed. Then he said, Premier Wen, we didn't know each other in the past, but this time we did, you leave me a phone call, and we must come and go often in the future. Premier Wen also laughed and immediately instructed the staff of the General Office of the State Council behind him to leave a mobile phone number and a landline number for the peasants. When he got on the bus, Premier Wen shook the farmer's hand and said, "Come to Beijing and look for me." Later, the Inner Mongolia Autonomous Region engaged in "ten full-coverage projects", and in this area, a special pavilion was built, with the inscription "Frequent Coming and Going". Later, Dalat Banner once produced a wine called Chang Lai Chang Xiang Wine.

Ordos wine culture: from deducting three respects to two to total scores!

However, trademarks such as "often come and go", "deduct three respects two", "total score", and "singing and drinking continuously" have all been registered by people with hearts.

In The Jungar Banner, when wine meets the tone of Manhan, it is another culture. This kind of exhortation folk song has four sentences, two sentences, a single person singing, and a man and a woman singing in pairs, in various forms. For example: "Shochu is originally grain water, and even when you drink it, you can't get drunk." "In the spring of March, the peach blossoms bloom, and the wine cup is brought to welcome the guests." "A plate of bean sprouts and a cup of wine, the love and righteousness are in the wine." They lingered on the Ordos wine table for three days.

Yu Ben was overwhelmed by the power of wine, and was entrusted by Mr. Jarry, a kangbashi wine, to write this wine culture to remember.
