First of all, let's prepare the ingredients:
1. Prepare a fresh turtle, slaughter it, put it in a pot, cook on high heat for two minutes, pour into a colander and flush off the foam on top.
2. Then tear off the outer membrane of the turtle, remove the internal organs of the turtle, wash it, and put it in the basin for later.
3. Prepare a handful of broccoli, put it in a small pot and add water to soak.
4. Prepare a few more dates and goji berries, pour in water and soak in.
5. Cut a green onion into pieces, put it into a small pot, cut the ginger into ginger slices, put it together with the green onion, and add a few peppercorns and two star anise to set aside.
Once the ingredients are ready, we start cooking.
6. Boil the water, put in the treated turtle, add 5 grams of cooking wine to remove the fish, cook on high heat for two minutes, fish out and put it in the casserole dish for later.
7. Add a little cooking oil to another pot, pour in the green onion and ginger and stir-fry the large ingredients, add the right amount of water, add 8 grams of salt, 1 gram of pepper, 1 gram of sugar, stir and open the seasoning.
8. After the water boils, pour in 100 grams of pork belly prepared in advance and cook on high heat for one minute.
9. After one minute, turn off the heat, pour into the casserole, cover the pot, change to medium heat and simmer for 20 minutes.
After 10.20 minutes, lift the lid, add the broccoli and dates and continue simmering for 5 minutes.
After 11.5 minutes, turn off the heat, drizzle with a little sesame oil, put the cooked turtle soup into the soup bowl, and sprinkle with goji berries and a few coriander to garnish, and serve.
