Specific production steps
Step 1: Remove the internal organs and wash the fresh turtle after slaughtering, put it in the basin and add 80 degrees of hot water to blanch it, tear off the old skin on the shell and claws, use it until it is chopped into pieces, keep the shell of the turtle for use, peel and cut the ginger, party ginseng, red dates, and goji berries and soak them in warm water.
Step 2: Add water to a boil in the pot, add the chopped turtle to the high heat and blanch the water, skim off the foam and pour out the water to rinse it (be sure to wash the blood foam).
Step 3: Add 30 grams of lard to the pot and put in 20 grams of ginger shreds, 10 grams of peppercorns and stir-fry until fragrant, pour in the turtle pieces and fry dry water, cook 20 grams of cooking wine,
Step 4: Then pour boiling water over the turtle, add 15 grams of salt, bring to a boil over high heat and skim off the foam again, and filter out the peppercorns and ginger shreds with a dense leak.
Step 5: Pour into the pressure cooker, add 10 grams of soaked ginseng, 15 grams of red dates, pour into the pressure cooker, turn to low heat and simmer for 35 minutes.
Step 6: When the time comes, turn off the heat, add 10 grams of monosodium glutamate, 10 grams of soaked goji berries, 15 grams of pepper, and put the shell of the turtle on top, and you can put it out of the pot and plate.
Tips
Turtle must be blanched in water, and then thoroughly wash the blood powder, the addition of lard can make the taste more mellow, when frying must be fried dry water, do these two points, even if the turtle is cooled a little fishy smell will not have.
