Donkey meat with spiced sauce

raw material:

Net donkey meat 5000g, rice wine 100g, refined salt 50g, peppercorns 10g,

Rock sugar 50g, cinnamon 5g, red yeast rice 20g, grass fruit 5g, star anise 5g,

Hawthorn slices 50g, soy sauce 200g, ginger 20g, green onion 30g.

Preparation Method:

(1) Wash the donkey meat with water and soak it in water for another 5 hours. Place the pot on the fire, pour water to a boil, add donkey meat to blanch the water, then cool it with cool water, and boil the red yeast rice to make red yeast rice water.

(2) Add rock sugar to the pot and fry until golden red, pour in water, soy sauce, salt and rice wine to boil, add red yeast rice water and hawthorn slices, put the peppercorns, cinnamon, grass fruits, star anise into a cloth bag and tie the mouth tightly into the pot, add green onion and ginger to boil for about 3 minutes, then put the donkey meat into the boil over high heat, and then simmer for 4 hours on medium heat.
