Hainan coconut cup, formerly known as "dragon and phoenix soup", is stewed with sea snakes (dragons) and Wenchang chicken (phoenixes) as the main ingredients. In 1996, when he participated in the National Diet Expo Competition, he was named "Coconut Cup" and won the gold medal.
Hainan coconut cup has a long history. Before liberation, Hainan men went to Nanyang to make a living, and before leaving, their wives did their best to cook for their husbands. Limited to conditions, it can only be made around coconuts. They choose the best fresh old coconut, peel the brown, leave the inner shell, saw a round block at the top fifth, filter the coconut juice for later, put in the fattest and most delicious small piece of bone-bearing Wenchang chicken (the first of the four famous dishes in Hainan), the sea snake with rheumatism and the five flavors of Chinese herbal medicine (dang ginseng, goji berries, lotus seeds, red dates, Huaishan), and then add clean coconut juice according to the amount, cover the lid and put the porcelain bowl into the cage, simmer slowly for two or three hours, and add salt and condiments as needed after leaving the cage. The soup is milky white, and the soup noodles float with golden chicken fat and red dates dotted with red dates, which are not only beautiful, but also pin their wives' feelings and wishes. When overseas Chinese return to their hometowns and taste coconut cups, they often have mixed feelings.
It is the characteristics of coconut flavor that can "blend and eat", and the variety of coconut cups is rich and colorful. The most common ones are chicken cup, lamb cup, pigeon cup, high-end shark fin cup, bird's nest cup (dessert), ginseng soup cup... Wait a minute. In terms of production methods, the coconut hard shell is usually retained, the original cup is prepared, and the exquisite pattern is engraved on the coconut cup shell, and even more on the flesh after the hard shell is removed, the black skin of the coconut meat is used to carve out the pattern of black lines on a white background, which is exquisite and breathtaking.
