Nanxiang Xiaolong, also known as "Nanxiang Big Meat Steamed Bun" or "Guyiyuan Xiaolong", is a traditional snack of Nanxiang Town, Shanghai, which is loved by tourists from all over the world and is one of the delicacies that must not be missed in Shanghai.

Nanxiang is a thousand-year-old town, and in 505 AD, the White Crane Nanxiang Temple was built here, because of the temple's name. Nanxiang Ancient Town has Shanghai's largest Jiangnan garden Guyi Garden, Nanxiang Old Street and other attractions, once there was a saying "little Nanxiang Sai Sioux City".
The core key part of Nanxiang Xiaolong's snack is the meat filling of the bun, which is made of pork leg meat with sandwich meat, sprinkled with a little ginger and meat skin jelly, salt, soy sauce, sugar and water.
Nanxiang Xiaolong has a long history, and it is said that its production skills were born in the 10th year of Tongzhi in the Qing Dynasty (1871 AD), which has a history of more than 100 years.
Originally, Huang Mingxian, the owner of a snack bar in Nanxiang Town, adopted the method of "heavy filling and thin skin, changing the size from big to small" to the traditional meat steamed buns, using unleavened refined flour as the skin, pork leg fine meat hand-chopped filling and meat skin jelly.
Later, the production skills of Nanxiang Xiaolong were only passed on between masters and apprentices, and in 1958, Nanxiang Guyi Garden resumed operating Xiaolong steamed buns. In 2000, Li Jiangang, the sixth generation of Nanxiang Xiaolong, formulated the standards and specifications of the technique, selecting materials, recipes, stirring, and even kneading and rolling dough, each of which has a clear standard.
Nanxiang Xiaolong is known for its thin skin, tender meat, juicy, delicious taste and beautiful shape, and when you take a bite of the steaming Nanxiang Xiaolong, you will involuntarily suck this delicious soup.
Everyone remembers to first suck the soup of the bun, and then eat the skin and filling of the bun, which is the most correct way to eat Nanxiang Xiaolong.
