Whenever there is a red and white celebration or a festival such as the Spring Festival and the Mid-Autumn Festival, tofu is an indispensable dish. As the main food that the hometown people welcome to send, it is both homely and elegant. Eat a table of old-fashioned tofu mats and the host and guests will be satisfied.

The mountain people make tofu, which is originally handmade. First, grind the soybeans (also known as bean yellow) on the stone grinding into watercress (also called bean yellow), use a dustpan to remove the bean skin, and then soak it in water, and then put it into the small stone mill after the watercress is expanded and add water to "grind" into raw soy milk. Grinding soybean milk is a manual work, requiring the cooperation of two or three people, one of them takes a spoon made of horns, and at the same time conforms to the speed of the small stone mill, he constantly scoops the soaked watercress into the grinding eye, and there is a white slurry flowing into the large wooden barrel below. Cover the barrel for natural fermentation for an hour, boil a large pot of water on the other side, set up a hanger on the pot table, tie it to the four corners of the hanger with a coarse cloth bag, and pour the soy milk into the bag, so that the fine white juice flows into the pot, and the rough okara is blocked in the bag. Soybean milk tumbled in boiling water, scooped some brine or sour pulp with a spoon and poured it inside, four or five minutes to order once, continue to order four or five times, soy milk began to assemble, like a cloud, slowly became a tofu brain. The last process is to put the tofu brain into a coarse cloth bag, put it into a bamboo frame, squeeze the slurry water with a large stone, and squeeze it dry to become a white and tender tofu.

The tofu that comes out of this way is white, live, fine, tender and solid. The whole family gets together, takes a piece of new tofu and puts it on a plate and breaks it into pieces, pours it with chili water and eats it deliciously.

When the mountain people entertain guests, they will also fry the tofu or fry, or soak in sauce, or boil, make it into slices, strips, silk, blocks, pills, and then with a variety of ingredients, the tofu dish becomes red, yellow, white, brown, etc., so that people do not eat first. People taste tofu mat is also very skilled, the east of the tofu balls are well done, the west of the garlic mixed with spicy tofu shredded flavor, the door is clear.

I remember when I was a child, when I was in school, I often stole some soybeans at home and exchanged hot tofu at the old man who sold tofu at the school gate. Mixed with sauce vinegar garlic water and spicy seeds to eat a bite, that fragrant! Later, when I went out to work, whenever I had free time and wanted to adjust my life, I couldn't help but think of tofu in my hometown.
