Taste of Hunan 丨 Changde's parents' tea, the size of dozens of bowls, there is more than this?

author:Red Net

The lover's hometown is in Changde Cangshan.

Cangshan mountain scenery is beautiful, the water is babbling, the folk customs are simple, and the hospitality is hospitable.

Every year, the lover and the son have to live for a period of time. Every time I went to pick up my mother and son-in-law and go home or visit my father-in-law and mother-in-law for the New Year's Holiday, the industrious and hospitable father-in-law and mother-in-law were busy making tea to entertain my half-son.

There is no tea in my hometown, and the guests who come to the house, whether they are far away or close, have always been a cup of boiling hot tea water. Before I went to Changde, I hadn't even heard of tea making.

Tea, as the name suggests, has to be "beaten". There are only two tools for beating: a stick and a bowl.

The father-in-law's stick was a hawthorn tree stick about a meter and a half in length and the thickness of an arm. The bowl is a local special clay pot, the inner wall of the clay pot is evenly densely covered with radial grooves, extending from the bottom of the pot to the edge of the pot, and the hand touches it, which is unusually rough.

Taste of Hunan 丨 Changde's parents' tea, the size of dozens of bowls, there is more than this?

Tea from the in-laws' house.

The tools of the beating are indeed simple, but the process of beating is extremely hard, laborious and cumbersome.

Tea is usually beaten by the father-in-law.

My father-in-law sat in a reclining chair against the wall. Clamp the bowl tightly with your calves and feet in a 45-degree diagonal position. In his right hand he held the thick, one-and-a-half-meter-long hawthorn tree stick. With your left hand, you grab a handful of tea leaves and a piece of ginger and put them into the bowl, pound them frequently, and quickly rotate along the inner wall of the bowl, and then rotate again. While beating, we constantly add some cooked sesame seeds, peanut kernels, soybeans and other ingredients to the bowl. When it's too dry, add a little water from time to time. It is not completed until the various ingredients in the bowl are mashed into a delicate porridge.

At this time, my father-in-law was always tired and sweating. Even on cold days, you need to take off your coat.

I tried to wrestle it too, and my right hand was already sore after holding the stick for a few turns. The legs and feet that clamped the bowl also began to tremble, and the stick almost smashed the bowl.

My father-in-law took the stick and told me with a smile that the stick had been longer before, and the more it had been beaten, and it had accumulated over time, and it was slowly shortened; the rough surface was also slowly rounded...

My father-in-law was busy making tea, and my mother-in-law didn't rest for a moment. She had to prepare the "pressed table" ingredients for tea.

My mother-in-law is a master of making jar dishes, and at the base of the wall of the patio, there is a slip of vegetable jars. It is filled with spicy and refreshing dried turnips, kohlrabi, knife beans and other side dishes. Whenever it came time to drink tea, she always had to change the pattern to pile up the round table so that she could not put it down.

After we sat down around the table, my mother-in-law put a spoonful of porridge-like "tea feet" in each person's bowl, and if she wanted to eat salty, her mother-in-law put some salt, and if she wanted to eat sweet, she added some sugar. My father-in-law carried a piping hot water bottle and quickly poured boiling water into each bowl. The boiling hot water is washed into a whirlpool in the tea bowl, and the "tea feet" are naturally flushed in the swirling boiling water. Take a sip while it is hot, fragrant, spicy, salty (sweet) and other flavors will spread in the mouth, the fragrance is long, warm the heart and stomach...

My mother-in-law always doesn't come to the table at this point. She would take her father-in-law's kettle, and we would take a sip and she would add another; if she drank a bowl, she would add a bowl.

Most of the ingredients in the "pressed table" are pure green food grown and made by my father-in-law and mother-in-law. All from the hard work of my father-in-law and mother-in-law, no cutting corners, no counterfeiting, each of which is the best selection.

When saying goodbye, my father-in-law and mother-in-law always stuffed all kinds of ingredients into the trunk of the car with a bag on the left and a bottle on the right: bacon, sausages, chicken, duck, dried vegetables... As long as they have always tucked in without reservation.

My father-in-law and mother-in-law are over the age of one. Whenever I watch them busy, I can't bear it, but I can't help it. In the eyes of my father-in-law and mother-in-law, it was disrespectful for me, the most honored guest, not to drink a cup of tea. After hard work, my father-in-law and mother-in-law always enjoy it happily. Go once, do it once...

May my father-in-law and mother-in-law live a safe and long life!
