When soaking lotus roots, prepare the accessories, and cut a little celery into small pieces and set aside. After 10 minutes, the lotus root is fished out and rinsed again with water to wash the starch cleaner. Then add the right amount of salt to increase the bottom taste, pour in the white sesame seeds just prepared, stir well, and let each lotus root be wrapped with white sesame seeds. Then add corn starch in a small number of times, grasp and mix evenly, so that each root is wrapped with starch, the starch here can only be made of corn starch, and it will be fried to be more brittle, and it will be set aside.
Then pour wide oil into the pot, I use rapeseed oil here, many friends do not know how to give rapeseed oil to taste, in fact, it is very simple. First use a large fire to boil the rapeseed oil, that is, when the rapeseed oil is burned until the smoke is emitted, about 70% or 80% of the hot oil temperature. Then turn off the heat and cool the oil to 50% heat, that is, after the chopsticks are cooked, they can make dense small bubbles.
Then put the lotus wire in, be sure to put it loosely, do not pour it all together, otherwise the lotus wire will all stick to a ball. Do not move the lotus root immediately after the pot is placed, so as not to shed the starch. Wait until the lotus wire is fried and fixed, use chopsticks to separate the sticky lotus wire, and fry it with medium heat, the fire can not be too big, otherwise it is easy to fry the paste. It can't be too small, otherwise the lotus silk will not be crispy.
Fry until the lotus silk is slightly yellow, you can start the pot, and then raise the oil temperature to 70% heat, pour the lotus wire into the pot and re-fry, the lotus silk after the frying will be more crispy, and it is not easy to return to soft, the lotus wire can be fried to golden crisp and crispy can be set aside.
Then leave a little oil in the pan, pour in the peppers, peppercorns and ginger and garlic and sauté over low heat for about 1 minute. Then pour in the celery segments, sauté until 6 ripe, and pour the lotus root into it. Add the right amount of salt, a little pepper powder, do not like to eat pepper powder can be replaced by pepper or do not add, stir-fry into the flavor, it takes about 1 minute. Then pour the shallots in, stir-fry for 10 seconds to start the pot, no need to add any other condiments, just do this and come out super delicious.
