The fresh leaves of oolong tea need to have a certain degree of maturity, which is older than the fresh leaves of green tea and black tea, which is an important factor in the formation of the quality of oolong tea. This raw material has less content of tea polyphenols, caffeine and nitrogen than young leaves, while the content of ether extract is high. Ether extracts play an important role in the formation of the aroma of oolong tea. Different varieties of tea trees will also have unique aromas, such as the cinnamon fragrance of cinnamon, the peach fragrance of yellow tangerine, the floral fragrance of phoenix single bush, etc.

Oolong tea has a strong taste, no bitterness of green tea, no astringency of black tea. Oolong tea drying green, drying green, and repeated shaking process, so that some of the tea polyphenol oxidation, bitter taste decreased, polysaccharide substances increased, sweetness increased, after several months of fermentation after drinking. High-quality oolong tea is fresh and sweet, with a sense of aftertaste. Oolong tea with a bitter taste or insufficient sweetness is mostly caused by improper process control.

The most important thing about oolong tea quality is the attractive aroma. The aroma of oolong tea is mainly formed in withering and shaking, the aroma of oolong tea in addition to the tea variety, the origin factors, the degree of fermentation is also very large, the degree of fermentation is light, it forms an aroma style close to green tea; the degree of fermentation is heavy, it forms an aroma style close to black tea.

High-quality oolong tea also pays attention to rhyme, which is not found in other teas. For example, Wuyi Rock Tea has a rock rhyme of rock bone flower fragrance, and Tieguanyin has a unique Guanyin rhyme.
