Champagne refers to wines that can only be made from grapes grown and harvested in a limited area of the Champagne region of France. Due to the unique geography, soil and climate of the Champagne region, the grapes used to make Champagne have qualities not found anywhere else in the world.

Champagne is naturally fermented in a bottle, and all aspects of winemaking must strictly comply with the requirements of the production specifications, and all these specifications make up the quality technical requirements of the Champagne appellation of origin.

Main rules:

There are only seven legal grape varieties: Chardonnay, Pinot Noir, Monière, Alban, Little Merry, Pinot Blanc and Pinot Gris, but only three of the grape varieties that mainly account for the vast majority of cultivation are Pinot Noir, Monière and Chardonnay;

Pruning methods: Gordon pruning method, Chablis pruning method, Double Juyot pruning method and Marne Valley pruning method;

Limit grape yield per hectare;

The National Institute of Origin and Quality (INAO) stipulates an annual yield of 10,400 kg per hectare. Each year, INAO increases or decreases this base amount based on the quality and yield of the grapes. However, the grape yield per hectare named "Champagne" cannot exceed 15,500 kg/ha.

A maximum of 102 liters of juice per 160 kg of grapes, according to tradition, each press loaded with grapes in units of 4000 kg, i.e. a "mark (marc)", from which only 2550 liters of grape juice can be extracted. The press stores the 2050 liters of "cuvée" extracted for the first time and the 500 liters of "taille" extracted for the second time. ;

Determination of the minimum alcohol content of grapes per year;

Separate places for brewing and storing champagne;

A natural brewing process, known as the "Champagne Method";

Aged in bottles for at least 15 months before leaving the factory and aged in bottles for at least 36 months for vintage champagne;

It should be noted here that Champagne is a sparkling wine, but not all sparkling wines can be called Champagne, and the most basic premise of Champagne must be produced in the French Champagne region and brewed in strict accordance with the champagne rules to be called "Champagne".
