With the Mid-Autumn Festival approaching, the Guangdong Provincial Market Supervision Bureau organized the provincial market supervision department to carry out special sampling inspections of seasonal foods, and carried out full-chain supervision and inspection of production, sales and catering links, urging enterprises to implement the main responsibility for food safety, focusing on checking whether food production and operation enterprises strictly implemented relevant systems such as raw and auxiliary material purchase inspection, production process control, and product factory inspection to ensure the food safety of the masses. Up to now, the special sampling inspection of seasonal food mooncakes in various parts of the province has carried out a total of 4923 batches of mooncakes, of which 116 batches are unqualified, and the unqualified discovery rate is 2.35%, mainly for sodium, dehydroacetic acid and its sodium salt, acid price, total number of colonies and other unqualified items.
Among them, in the special sampling inspection carried out by the Guangdong Provincial Market Supervision Bureau, a total of 138 batches of mooncakes were sampled, 4 batches of unqualified samples, and the unqualified items were acid price and sodium content.
According to the market supervision department, sodium is an important inorganic element in the human body, which participates in the metabolism of water, ensures the balance of water in the body, and maintains the balance of acids and alkalis in the body. When the sodium intake is high, it will reduce the reabsorption of calcium accordingly, which can easily cause calcium deficiency in the human body, and in addition, the intake of higher sodium may also appear edema, blood pressure rise and so on. The reason why the content of sodium detected in the moon cake exceeded the standard may be that the raw materials and excipients used contain a high proportion of sodium; the production and processing links are not strictly controlled, including uneven mixing during production and processing, and the enterprise does not add in accordance with the requirements of the label or the enterprise standard.
Acid price mainly reflects the degree of rancidity of oils and fats in food, acid price exceeding the standard will lead to food with a harrah taste, and the aldehydes, ketones and acids produced when the standard is serious will destroy fat-soluble vitamins, which may lead to gastrointestinal discomfort. The reason why the acid price in the moon cake exceeds the standard may be that the company's raw material procurement is not strict, the production process is not up to standard, the product storage conditions are improper, especially when the storage temperature is high, it is easy to lead to fat oxidation rancidity in food.
Dehydroacetic acid and its sodium salt is a broad-spectrum food preservative, and long-term excessive intake of dehydroacetic acid and its sodium salt can endanger human health. The reason for the excessive use of dehydroacetic acid and its sodium salt in the mooncake may be: the enterprise exceeds the scope of use to increase the shelf life of the product, or to make up for the poor sanitary conditions of the product production process; or the compound additive it uses has a high content of the additive; or it is not measured or the measurement is inaccurate during the addition process.
The total number of colonies is an indicative microbiological indicator, which is mainly used to evaluate the cleanliness of food and reflect whether the food meets hygienic requirements during production. The total number of colonies in the moon cake exceeds the standard may be that the initial number of raw materials and accessories used by the enterprise is high, and the sanitary conditions of the production and processing process are not strictly controlled according to the requirements, or the cleaning and disinfection of the packaging container is not in place, and it may also be related to the lax sealing of the product packaging and the improper control of storage and transportation conditions.
The Provincial Market Supervision Bureau said that it has required local market supervision departments to investigate and deal with unqualified food and its producers and operators in a timely manner, order enterprises to find out the flow of products, take measures such as removing shelves and recalling unqualified products to control risks, and analyze the causes and make rectifications in a timely manner. Local market supervision departments will record the relevant situation in the food safety credit file of production operators as required, and disclose relevant information on the website of the regulatory department in accordance with regulations. Market supervision and administration bureaus at all levels will strictly dispose of unqualified mooncakes, ensure that unqualified enterprises have rectification penalties in place, and guard the safety of mid-autumn festival diets.

1. The golden-legged Wuren mooncake produced by Maoming Chunyi Cake House Co., Ltd. in Maoming City, Guangdong Province, sold by Maoming Chunyi Cake House Weiwei Store, the acid price (in terms of fat) project is unqualified;
2. The wudousha mooncake (tide-style puff pastry mooncake) produced by Shantou Beishanwan Food Development Co., Ltd., which is nominally sold by Huizhou Runfu Commercial Co., Ltd., is unqualified in the acid price (in terms of fat);
Third, the mooncake produced by guangdong Nanfangyue Food Co., Ltd. (Xiyangyang Nanfangyue), the sodium project is unqualified;
Fourth, the seaside mini moon (puff pastry white lotus egg yolk mooncake) produced by the nominal Zhanjiang Seaside Hotel Co., Ltd., the sodium project is unqualified.
