Cool powder grass can be made into fairy grass jelly because it contains a wealth of soluble polysaccharides, the leaves can be picked off and rubbed to feel the sticky, fairy grass polysaccharides mainly exist in the cell wall, soluble in water can be solidified into a gelatinous, generally collectively known as fairy grass gum. Fairy grass gum is an acidic polysaccharide, which is more easily dissolved in alkaline solutions, so adding a little edible alkali in the process of making fairy grass helps the release of gum. The black color of fairy grass jelly is mainly derived from flavonoids in cells, and it is also easier to dissolve in alkaline environments, and the stems of fresh cool grass sometimes appear purple-red, which is also brought about by this pigment.

3, Chaoshan area to eat called grass grits (not the kind of green glutinous rice dumplings), looks more simple and rough, from the large ceramic jar of warm fairy grass jelly with a copper spoon scraped out of the bowl, horizontal and vertical strokes after adding brown sugar or white sugar, eat even the spoon is not a necessity, along the side of the bowl to suck can eat the basin dry bowl clean.
