In 2024, Chen Jiawei, who has worked for 17 years, has grown into a senior technician of China Great Wall Wine Co., Ltd., standing in front of the big screen of COFCO Great Wall Lakeshore Portugal Garden Data Center, he expertly explains the production period of each grape, and in the wine exhibition hall, he shakes his red wine glass and proudly shows his wine to visitors. In the Chinese wine world, "Shacheng" represents a region with a strong background. In 1979, the first bottle of dry white wine in New China that met international standards was made from local longan grapes. In Chen Jiawei's heart, longan grapes are synonymous with inheritance. He hopes that through his own hands, he will carry forward the longan grape brewing technology and brew a unique style that belongs to China.

In 2007, Chen Jiawei's technical team took the initiative to undertake research topics related to longan grapes. In order to find the most suitable grape varieties for winemaking, Chen Jiawei set himself a goal: to visit all the local plantations. At the end of the day, it is often late at night when I return home after researching seven or eight plantations.

In order to study the influence of different growing conditions on the quality of grapes, Chen Jiawei personally managed ten acres of hillside land from his fellow villagers, one in the sun and one in the shade. In order to study the effect of different yields on the quality of winemaking, he numbered the bunches of grapes in the vineyard one by one, up to a thousand.

Perseverance, time gives the best answer. In 2017, Chen Jiawei has carried out a comprehensive exploration from cultivating varieties to innovative processes, and he has become proficient in processing grapes by means of concentrated fermentation, wild yeast fermentation, or cutting the bunches of grapes, fermenting the top 1/3 of the fruit separately, and the bottom 2/3 of the fruit fermenting alone.

"In 2020, I suddenly found that the longan old rattan with a yield of 2,000 catties per mu has the best performance in winemaking, and the dry white longan produced has significantly improved in terms of taste and aroma richness. In my vision, the dry white longan should have a fresh white floral fragrance similar to apricot blossoms and peach blossoms. So I immediately researched the blending of longan grapes and different varieties. Chen Jiawei said. In 2020, the blending method of "longan + Gewürztraminer" was officially finalized.

Finally, the longan grape, which carries the memory of China's thousand-year-old terroir, is once again revitalized in the hands of Chen Jiawei. In September 2021, two new wines made mainly from longan grapes shined at the Asian Wine Quality Competition, winning the Grand Gold Award and the Gold Award successively. At the end of 2022, Chen Jiawei led the team to summarize the relevant scientific research projects into a scientific and technological achievement, and the experts unanimously recognized that this achievement had reached the "international leading" level.
