Then I made a discovery, why is the skin of the crunchy shark different from KitKat? One is undulating on the surface, and the other is as calm as a mirror.

Crunchy shark making
First of all, let's look at the more common crunchy shark production, which is actually to add an extra chocolate coating to the cream wafer.
Cut the finished wafer biscuits into the right size and send them to be coated.
Get neat and send to a hot chocolate bath. Let this chocolate fall!
From right to left, the wafer, which was originally full of chocolate, has become only a thin layer, revealing the grid pattern of the wafer.
In the production of the Holyo pie, there are similar steps.
And why is it poured on the surface, and there is a coating on the bottom? Oh! It's been a long time, my soul is hand-painted!
In short, we ended up with a chocolate wafer that was conformable but not flat. I thought about it, if I licked all the chocolate on the sides, wouldn't it be a "filled" biscuit. The wafer is sandwiched with sauce, and the chocolate layer is sandwiched with wafer, matryoshka doll!
KitKat Production
Now you look at KitKat, the logo on it is so distinct. There is no doubt that it is the mold that is poured.
Let's take a look at the animation first, the white one below is the mold, and there are four grooves in one board, which represents four wafers. But all I bought were two wafers.
Then it goes to the factory, where a certain amount of chocolate sauce is poured into the mold and the base is made.
Then press in the slitted wafer.
Then pour another layer of chocolate sauce to make a top and completely envelop the wafer. Then scrape off the more chocolate sauce. I know I know, chocolate is not superfluous, this step is superfluous!
The corridor chocolate wafers are plate-by-plate, and there is no logo on this side, and there will be some wafer grid patterns.
After solidifying, you can see that the surface of the chocolate with the logo is really smooth.

Compared to eating crunchy sharks, KitKat has a process of breaking, and if it is broken very flat, I feel that it will make people eat more satisfying... It's not my obsessive-compulsive disorder, right?
