Step 1: Pick the beef

If you want to fry the beef tenderly, you must first buy the right meat, such as fried beef, the first choice is beef tenderloin, which is what we often call beef tenderloin, beef tenderloin is a piece of meat on the back of the cow, this part of the meat has no fascia, the meat is particularly delicate, as long as it is handled properly, after this part is fried, it is super tender to eat. In fact, choose "upper brain meat", this part of the beef, fat and thin, after frying, the oil is moist, and it is particularly fragrant to eat. Other parts of the meat can't be fried, especially beef shank and beef brisket, as long as they are fried in the pot, they will be very old and can only be stewed and eaten.

Step 2: Cut the beef

Because the fibrous tissue of beef is thicker and the connective tissue is more dense, so when cutting beef, you must cut it against the lines of the meat and cut off the beef fibrous tissue, which can make the beef more tender and flavorful. Step 3: Marinate the beef

The egg white is relatively smooth, and each piece of beef is coated with a little egg white, which can make the beef taste smoother, so if you want the beef to be fried, you must add a little egg white and baking soda when marinating the beef. First course: Stir-fried beef with chives

Ingredients preparation: 250 grams of beef, 100 grams of chives, 7 grams of starch, 1 gram of baking soda, half an egg white, light soy sauce, salt, chicken essence, ginger, appropriate amount of cooking oil.

Method:

1. Wash the beef and cut it into slices, then put the starch, egg white, salt, pepper, and chicken essence into the meat and stir well, then put a spoonful of oil into the beef and mix well.

2. Rinse the old leaves and skin of the chives after removing them, and then cut the chives into 4-5 cm segments for later use.

3. Put an appropriate amount of oil in the pot, wait for the oil temperature to heat to 5, put the batted beef into the pot, don't be in a hurry to fry at this time, wait for the beef to fry for 20 seconds, and slowly stir-fry the beef to make the surface of each piece of beef have pulp.

4. Put the chopped ginger slices and chives into the pot, then add a little salt and light soy sauce, and continue to fry seven or eight times before eating.

Second course: Stir-fried beef with tea tree mushrooms

Method: According to the method of stir-frying beef with chives, after the beef is marinated, soak the tea tree mushrooms in warm water for about 3 hours until the tea tree mushrooms are completely swollen, and then put an appropriate amount of oil in the pot, and wait for the oil temperature to be 5 hot, put the beef into the pot and fry until 6 is hot, and then put the tea tree mushrooms, green and red peppers, and minced garlic into the pot, and continue to stir-fry with the maximum heat, so that the fragrance in the tea tree mushrooms can be stir-fried out, and finally put a little soy sauce, sesame oil, salt, chicken essence, and a little water, and fry them well to eat.
