Why do Kyrgyz people make bread with a hole in the middle?
No, it has nothing to do with the economy. Kyrgyzstan is not short of flour, so the reasons are different.
Take Dagestan, for example. They also baked cakes there, but the local bread was flat (last photo).
So what is the reason why the Kyrgyz people have a "gap" in making bread?
It turns out that it's all about baking technology. If the same Dagestan cooks bread in a normal "flat" oven, then the Kyrgyz use a "spherical" mud stove.
To put bread in such a clay oven, it must be glued to the inner wall. This is done with the help of a special "pillow with handles".
So, that hole in the bread is necessary so that the baker doesn't fall off the pillow while the baker takes it off the table to the oven. Then, the cake is also pressed tightly against the walls of the oven – so "dents" are inevitable.
By the way, the center of Kyrgyz bread is always crisp and usually eaten first. Then eat the leftover cake.
