These slightly sweet gluten-free waffles are served with honey ghee and juicy berries for both breakfast and dessert. They get a rich flavor and soft texture from corn flour, which makes them taste like freshly baked corn bread sprinkled with juicy strawberries and fresh mint to make dessert and brunch dreams come true.
It's great to share today's recipe because today's dessert waffles are being made. Just omit the corn kernels, add a little sugar, vanilla. I mixed an equal amount of soft ghee with honey and a pinch of salt, then spread it on a warm waffle and melted it into a sauce, and this dessert waffle recipe was born.
Ghee is a butter that is clarified to remove water and milk solids and then cooked to a golden brown with a nutty flavor. We also use ghee instead of butter in the waffle batter, which increases the warm richness of the butter and adds flavor.
Ripe strawberries only need sugar and lemon to condense the juice into a smooth sauce, and you can use any berries you have on hand, even sliced peaches or plums. A small amount of mint adds freshness in contrast to the richness of ghee, which can also be simply replaced with a spoonful of plain yogurt.
Ingredients for formulation
Wafer:
- 120 g corn flour
- 130 g sweet white rice flour
- 30 g tapioca flour/starch
- 35 g organic granulated sugar
- 12 g baking powder
- 2.5 g salt
- 245 ml milk
- 3 large eggs
- 5 g vanilla extract
- 32.5 g butter
Berry:
- Basket of strawberries, rinse well and hull slices, appropriate amount
- 25 g granulated sugar
- 15 ml lemon juice
- A small handful of mint leaves, chopped
Honey ghee:
- 45 ml honey
- 22.5 g butter
- Sea salt to taste
- Cream to taste
Production steps
1: In a medium bowl, sift corn flour and sweet rice flour with tapioca starch, sugar, baking powder and salt. In a small bowl or measuring cup, whisk together milk, egg yolks and vanilla.
2: Use a blender to stir the egg whites at medium and high speeds until a soft peak is formed, about 2-3 minutes.
3: When the egg whites are whipped, add the milk mixture and melted ghee to the dry ingredients and stir until completely mixed. Gently mix the beaten egg whites into the batter until well mixed, taking care not to overmix.
4: If you use an electric waffle stove, bake the waffle according to the manufacturer's instructions, gently brush the butter on the mold, and heat both sides for at least 3 minutes on medium heat. Gently brush the top and bottom of the waffle stove with ghee. Pour the batter into the middle of each waffle mold and bake for 60-90 seconds, turn the waffle iron and bake for another 60-90 seconds. Gently open the waffles for inspection and continue cooking if necessary until both sides are crispy.
5: Transfer the baked waffles to the cooling rack placed on the baking sheet and keep warm in a low oven until edible.
6: In a medium bowl, stir the chopped berries with sugar, lemon juice and mint leaves. Let stand until the berries are juicy, at least 15 minutes to an hour.
7: Stir the honey, ghee and salt vigorously in a small bowl until slightly whisked.
8. When eating, spread the hot waffles with honey ghee, which should be warm enough to melt the ghee. Divide the waffles on a plate and top them with juicy berries and some yogurt.
