The world's first digital bakery used 3D printing technology to make candy

On April 24, 2022, a digital bakery called "The Sugar Lab" is using 3D printing technology to make candy that looks and tastes unique.

Chef Victoria Rose Johnson said: "There are some things I can't make as a cake decorator that can be done here. Sugar has a unique molecular structure that perfectly looks what you want it to be. “

Johnson spent years making cakes and now works mainly in sugar making. Chefs use special 3D food printers to create small, edible works of art. Founder Kyle Von Hasseln had the idea while in graduate school.

Von Hasseln said: "We wanted to know what 3D printing with sugar would look like. He invented the 3D printer, which Sugar Lab now uses to print unique foods.

Von Hasseln said: "We print at a rate of 1 per minute, so that's super fast and no other 3D printing technology can reach that speed."

First, a design model is imported into a machine program, like sending a file to a printer, but it's a digital blueprint for candy.

The machine uses flavored, fluid syrup to print layer after layer of structure, and then the color is sprayed.

Food 3D printers can print multiple candies at once. The final finished product is transported out of the machine and then purged with compressed air to remove excess powdered sugar. It's quite a dramatic scene, because the really vibrant design and colors of the candy are revealed in an instant.

The Sugar Lab has two famous printed candy products, one of which is a watermelon lemonade sugar cube, which will melt in your mouth first and taste like a piece of chewing gum that has been made into candy.

There is also a candy with a core-shell structure, its shell is lime salt, and inside is caramel pineapple Gannashi. Challenge it and you'll taste salty first, then sweet, which is a completely different tasting experience.

Of the two, the most unique is their complex combination of design and texture, which is light, sweet, instant to the mouth, and has a very unique taste.

Johnson concluded: "I've always loved beautiful things, and with this new production model of 3D printing, you can decorate and design what you want." "

The Sugar Lab sells prefabricated pieces for about $18-26 for 6 pieces. They can also create any custom design you want, but the minimum cost for these orders is around $1,000.
