It is said that the most classic breakfast and supper in Quanzhou is noodle paste.

The noodles, you can see one by one in the bowl, but you can't clip it, and you don't feel anything in your mouth when you eat it, and it melts all at once.

It seems that there is nothing, but in fact, the kung fu is outside the poem. It is necessary to use fresh fish, shrimp, rice, dried squid and scallops as a base to slowly boil the soup. It's the low-key pride of the seaside. The noodles need to be pulled by hand, as thin as a strand of hair, and then dried in the sun.

It is threaded in the seafood soup, after which it needs to be pasted with sweet potato powder, which is a local specialty of Quanzhou.

The batter is boiled in a large pot and customers can serve a variety of cooked food ingredients: sea oysters, marinated intestines, vinegar meat, pork liver, beef and so on.

The shop recommended pork intestines and vinegar meat, only to see her pick up a few sections of pork intestines and vinegar meat from the pot next to her, cut them and spread them at the bottom of the bowl, and then scoop a large spoonful of noodle paste and pour them on. The one I went to was the "Sea Silk Golden Phoenix" in Goldfish Lane, and the name was very good. I didn't do the raiders because it was next to the Nanyin Pavilion, and I wanted to wait for the Nanyin Pavilion to open the door, so I went to buy a bowl. Later, I learned that this store has been passed down for four generations.

The Lantern is not the same as the Tangyuan. As the saying goes: roll the Lantern in the north, wrap the tangyuan in the south.

The Lantern Festival in Quanzhou was brought by the northerners who moved south away from the Central Plains in the past generations, and the customs of the Northern Middle Ages were inherited on the shores of the distant sea.

Sea oysters are fried all over the coast. It is said that the sea oyster fry in Quanzhou is blessed with sweet potato powder from Hoi An, so it is particularly delicious.

But because I rarely eat sea oyster fried, there is no contrast, I can't say if it is particularly delicious. All I can say is that I like to eat it myself.

Gypsum (10 yuan, in addition to gypsum, you can also choose 5 kinds of food)

The main raw material of gypsum is the stone flower grass, a type of edible seaweed that grows on the reefs of the mid-tide or low tide zone in the Taiwan Strait, and is shaped like coral. (Online Information)

The gypsum is made by hand, first boiled in a large pot and then cooled by gauze filter, naturally solidifying, like jelly transparent and clear.

Egg peanut soup (8 rmb 1 serving)

I thought it was easy to cook peanut soup, but don't you just peel the peanuts and throw them in a pot and boil them with water?

The aunt in the shop said solemnly that it was not so easy. After the peanuts are peeled, the defects are removed first, then the red film is removed by soaking in boiling water, and then add water to simmer over low heat, and it must be a casserole. Wait until the peanuts are ripe before putting in the sugar.

Soup buns are common in Jiangsu and Zhejiang, but as a Sichuanese, I am not accustomed to the sweetness of jiangsu and Zhejiang soup buns. The soup bun eaten in this shop in Quanzhou is fine, slightly sweet.

By the way, the soups at this and the salty rice are delicious, they should be boiled with seafood, and pepper is added, which is a bit spicy.

Don't underestimate this little peppery taste. Pepper's ancestral home is India, known as "black gold" in ancient times. As the world's largest port, Quanzhou has an important cargo of pepper among the many merchant ships.

The taste of sand tea is very characteristic of southern Fujian Chaoshan province, with shrimp, garlic, onions, peanuts and other compound fresh aroma, slightly sweet, slightly spicy.

I was curious about what this taste had to do with "sand" and "tea", and when I looked it up, I learned that it was a Chaoshan transliteration of a Southeast Asian foreign word.

He said that everyone in Quanzhou had a tea table and drank tea. He also said that he only drank Tieguanyin.

I thought it was delicious, so I went to Hachima to buy Tieguanyin. The tea shop sister popularized another round of knowledge for me.

Oolong tea is geographically divided into four types: Northern Fujian Oolong, Southern Fujian Oolong, Guangdong Oolong, and Taiwan Oolong.

The representative of Minnan Oolong is Quanzhou Anxi Tieguanyin.
