Eel (small thumb size) 500g

Cooked sesame seeds 20g

Seasoning one

Chili noodles 30g

Peppercorn noodles 5g

Seasoning two

Balsamic vinegar 33g

Sugar 30g

Salt 3 g

Cooking wine 2g

Soy sauce 5g

Seasoning three

Flour 20g

Corn starch 10g

Recipe steps

1: Put the eel into boiling water, soak over low heat until just cooked, fish out and rinse, use a bamboo skewer to take the meat and divide it into two coarse wires.

2. Mix flour and corn starch to make a paste.

3: Absorb the eels dry, hang the paste into 50% oil and fry until crispy.

4: Mix the seasoning vinegar, sugar, salt, cooking wine and soy sauce together into a pot over low heat to make a thick, pour in the fried eel shreds, wrap the sauce and sprinkle with chili noodles, pepper noodles and cooked sesame seeds.

Tips

1, when modulating the paste, the water should not be too much, slightly thicker is better.
