Hubei is the land of fish and rice, and there has always been a custom of eating fish. After thousands of years of evolution, many ways to eat fish have been created, and the meat of the fish is made into fish rounds, which is one of them. The origin of the fish circle can be traced back more than 2,000 years, and it is clearly recorded in the Jingchu Chronicle. King Wen of Chu, who lived before 675 BC, was stuck in the throat by a fish thorn when he ate a fish, and immediately beheaded the official in anger. Scared that the chef did not dare to cook the whole fish for him to eat, he tried to remove the fish bones, chopped the fish into a colored mushroom, and made into fish balls. Lu Yongliang, a young chef at Wuchang Great China Restaurant, on the basis of inheriting the traditional production method, made the fish balls into the shape of barrel petals, and boiled them with chicken soup, shiitake mushrooms and other ingredients and spices. He used this dish and the "Mother and Child Conference" to participate in the first national culinary master technical performance held in Beijing in October 1983, and was named one of the ten best chefs in the country. Now Great China Restaurant, Yunhe Restaurant, etc. are serving this dish.
