1. Wash the yellow fish, scrape off the scales, remove the gills and dirty things in the stomach
2. Peel the washed yellow croaker and cut into strips about 1 cm thick and 1.5 cm wide
3. Open the egg, add half of the egg white to the fish, add oyster sauce, starch, cooking wine, salt and five-spice powder and marinate for a while
4. Mix the remaining eggs into a mixture
5. Cut off the four sides of the tofu skin, blanch in hot water, lay flat on the board, brush the egg mixture evenly on top, add the fish strips, and roll them together.
6. Brush a layer of egg mixture at the mouth of the rotten skin roll
7. Put a little oil in the pot, fold the skin roll down, put it in the pot, and remove it after 5 seconds. This step is to make the egg liquid coagulate and then the rotten skin roll is not easy to disperse
8. Cut the curd roll into diamond-shaped segments of about 5 cm
9. Put a little more oil in the pot, heat to 40%, and add the rotten skin roll
10. Fry until golden and crispy, remove the oil
11. Plate and sprinkle with a pinch of salt and pepper and chopped green onion
