Lao Ba Red Braised Lamb Restaurant is located here, the door is very simple, but the popularity is quite strong.
In the past, the streets and alleys of Xinxiang were full of red braised lamb shops, but now there are not many left. The boss ranked eighth at home, so he simply named the shop LaoBa Red Stew. In Xinxiang, Lao Ba's shop is definitely not a big shop, and even its fame is not too loud, but it is absolutely authentic for old eaters.
Basically all the people who come here to eat are old customers, so call the old eight before coming. In this way, you don't have to wait in the store, and you can directly eat the hot red braised lamb. Eat the meat first and then shabu-shabu, the lamb has almost no fishy taste, and after a while everyone will warm up.
Doing this line of catering, the old eight did not sleep lazily in the morning, the weather is cold, but also get up early to buy meat, if you go late, good meat has been picked up by others. Not far from the small shop is the vegetable market, a street is selling beef and mutton, the old eight have to buy more than forty pounds at a time.
Since there are more diners who come to eat red braised lamb at night, the old eight generally have to prepare meat in the morning. The lamb bone broth is boiled first, and then the lamb is fried, and the daughter-in-law will beat the hand next to it, but the seasoning is mainly based on the old eight.
If you want to make a red stew, each family has its own unique secret skills. Some are fried sugar color, some put old soy sauce, some use red yeast rice, some are accompanied by goji berry carrots, and lao ba uses Pixian watercress, and adds some ingredients made by themselves. The lamb is first fried and then boiled and then simmered, and the heat is natural enough.

Frequent diners will tell Lao Ba to cook the old tofu into the pot in advance, so that it is more flavorful. Most of the people who come here to eat are Xinxiang natives, and of course, there are some foreigners who come to visit. An uncle recalled the scene of eating Xinxiang red braised lamb for the first time in Baotou, Inner Mongolia thirty years ago, and I can't forget it for so many years. We also met a Jiangsu man during the interview, who said that in the south, red braised lamb is eaten as a dish. I didn't expect that in Henan, I could actually eat the feeling of hot pot, which was also a surprise.
In the face of the praise of the diners, Lao Ba seemed very modest. When he was young, he enjoyed traveling, riding and skiing with his donkey friends. He said that he did not have much ideal ambition now, and he wanted to run this small shop with his daughter-in-law, make the taste good, and the diners and himself were happy.
