When it comes to fermentation, many people first think of the biological oxidation process involving microorganisms such as making bread, yogurt, kimchi or moldy items.
However, in most of the tea making processes, the "biological oxidation" of tea is a series of oxidation processes that exist in the cell wall after the cell wall is broken, and the oxidases present in the cell wall promote catechins, which are not dependent on the participation of microorganisms, and are not even really "fermentation", but are called "fermentation" in the usual context of Chinese tea.
Black tea can be subdivided into three categories: Kung Fu black tea, small black tea, and red crushed tea.
Gongfu black tea is also called strip tea, because the initial production should pay special attention to the integrity of the rope, and it also takes a lot of effort to refine, so it was named "Kung Fu black tea".
Different kinds of Kung Fu black tea are generally named by place names, such as Min Hong GongFu, Dian Hong Gong Fu, Qi Men Gong Fu, etc. Twelve of the nineteen tea producing provinces in the country have produced Gong Fu black tea.
Gongfu black tea has a fine cord and a dark color. After brewing, the soup color, the bottom of the leaves are red and bright, the aroma is rich, and the taste is sweet and mellow. Among them, the representative tea is Keemun black tea, one of the four major black teas in the world, enjoying the reputation of "black tea queen", and is a world-class "star player" in Kung Fu black tea.

Small black tea is the oldest black tea, but also the originator of other black teas, other black teas are evolved from small black tea.
The classification of small black tea is relatively simple, there are two kinds of - "Zhengshan small species" and "outer mountain small species".
Zhengshan small species is produced in Wuyi Mountain Tongmuguan and is the world's first black tea. After the initial creation of the Zhengshan small species, the outside world followed suit, and for a time there were various "small seeds", so Paulownia named it "Zhengshan Small Seed" to show the authenticity of its tea leaves.
It is actually very simple to distinguish between these two kinds of tea in terms of taste, the small species of Zhengshan has a strong sweetness of guiyuan, and the small seeds of the outer mountains are relatively lacking in a few points.
