1: Separate the egg whites and egg yolks, add 20g of sugar to the egg yolks, beat the egg whisk until the sugar melts, add pure milk and corn three times, stir well.
2: Sift in the cocoa powder and flour, gently stir well with a rubber knife.
3: Add a little lemon juice to the egg whites, take one-third of the egg whites and put them in the batter and mix well, add the rest to the batter twice and mix well.
4: Pour the cake paste into the mold of oil paper, put it into the preheated oven in advance, and bake at 160 degrees on high and low heat for 60 minutes. After baking, remove the inverted buckle, let cool and remove the mold, cut out two cake slices and set aside.
5: Soak the gelatin slices in cold water to soften, put the water and caster sugar in a pot and boil and turn off the heat.
6: Whisk the egg yolks to a thick consistency, slowly pour in the sugar water and beat the egg paste while pouring. After pouring, continue to beat with the whisk for five or six minutes until the yolk paste cools down. 7: Melt the gelatin tablets in water, then pour the gelatin solution into the cheese paste and mix well.
8: Whisk the light cream until the soft foam appears, pour into the cheese paste, stir well.
9: Mix espresso and rum into coffee wine and set aside. Place a slice of cake embryo at the bottom of the mold, then brush a layer of coffee wine on top, pour a layer of cheese paste, repeat, and finally pour the cheese paste on the top layer and flatten it, and refrigerate it overnight.
10: De-mold, sprinkle chocolate powder on the surface and cut into pieces.
