Mussels are a delicious type of shellfish that can be cooked in a variety of ways, including steaming, boiling, grilling, etc. Whether eaten alone, with french fries, hard bread, or as a platter with other seafood, it's delicious. If you want to know how to cook mussels, follow these steps.
Preparation time (steamed mussels): 20-30 minutes

Prepare the ingredients. To make grilled mussels, the following ingredients need to be prepared:
0.9kg fresh blue mussels, washed
57g raw almonds
3.5 tsp. unsalted butter
1.5 tsp. chopped onion
2 cloves minced garlic
6 teaspoons dry white wine
1 tsp. lemon juice
1.5 tsp. crushed parsley
1/4 teaspoon crushed thyme leaf
1 teaspoon crushed wild lettuce small radish leaves
Sea salt for seasoning
Pepper for seasoning
Hard-skinned bread for serving
1. Preheat the oven to 204ºc.
2. Roast the original almonds. Spread 57g of raw almonds evenly on a baking sheet and bake in the oven for about 5 minutes until the almonds are fragrant.
3. Crush the almonds. Cool the roasted almonds and crush them by hand or food processor.
4. Heat a 5 liter cast iron baking dish without electrical resistance over medium heat. Add 1 teaspoon of butter and bake for at least 30 seconds until melted.
5. Add the shallots and garlic. Add 1.5 teaspoons of minced shallots and 2 cloves of minced garlic to the butter and bake for 2-3 minutes until they become translucent.
6. Add the wine and lemon juice and heat to a boil. Add 6 teaspoons of dry white wine and 1 teaspoon of lemon juice and stop heating immediately after boiling.
7. Add the herbs and almonds to the baking dish. Add 1.5 teaspoons of chopped parsley, 1/4 teaspoon of crushed thyme leaves and 1 teaspoon of crushed wild radish leaves, season with salt and pepper.
8. Turn the oven temperature up to 232ºc.
9. Place the mussels in the oven. Place 0.9 kg of fresh blue mussels washed and bearded in the oven, up to two layers.
10. Sprinkle the remaining 2.5 teaspoons of butter over the mussels. Cut the butter into small pieces and sprinkle evenly over the mussels.
11. Bake until the mussel shells are opened. Flip every 3-4 minutes until the mussel shells open and the sauce turns into a nice creamy shape.
12. Plate. Plate immediately, you can eat it alone or with some bread dipped in it.
Prepare the ingredients. To make fried mussels, the following ingredients need to be prepared:
1.4kg small mussels
5 cloves minced garlic
2 tsp. olive oil
57g mint crushed
57g basil
21g shallots
1 chopped red bell pepper
1 tsp. Asian fish sauce
1 teaspoon sugar
1 tsp. rapeseed oil
1. Scrub the mussels clean and remove the beard. Wipe dry completely after washing.
2. Cut 21g of green onion into 2.5 cm pieces.
3. Cut 1 red bell pepper into strips. Cut the peppers into thin strips.
4. Mix fish sauce, sugar and peppercorns together. Combine 1 teaspoon of Asian fish sauce, 1 teaspoon of sugar and black pepper to taste.
5. Fry 5 cloves of minced garlic in a large frying pan over high heat with 2 teaspoons of olive oil for about 30 seconds.
6. Put the 1.3kg mussels in a frying pan and sauté on high heat for 3-5 minutes until the shell is open.
7. Add the mixture of fish sauce to it and continue to fry until almost all the mussel shells are open, throw away if there is one that has not opened.
8. Add mint, basil, green onion and red bell pepper shreds and continue to sauté over high heat for 1-2 minutes. Stir-fry 57g mint, 57g basil, 21g shallots and 1 red bell pepper cut into strips over high heat, long enough to let the mussels taste.
9. Plate. Can be served with Thai basmati rice or eaten alone.
There is a very popular recipe called "French mussels". You'll first soak the chopped shallots in butter, then add mussels and a spoonful of flour (to thicken the sauce), add white wine (such as cheap Sauvignon white wine), and heat it up. When ripe, add chopped parsley.
Make a sauce of buttery white wine with lemon, pour it over the mussels, sprinkle it with some feta cheese, and dip it in a fine French bread and you will find it very delicious.
If your mussels are picked by yourself, not bought, make sure you don't pick them from polluted water. This is important because eating mussels from polluted water sources can lead to food poisoning.
