Carp noodles are a dish made by properly matching fish and baked noodles. "Baked noodles" is "dragon's whisker noodles", and on the second day of the second month of the second lunar month, that is, the day of the folklore's "dragon's head", the people of Kaifeng give each other gifts with dragon's whisker noodles to express good wishes. When people enjoy carp noodles, there is also a saying that "first eat dragon meat, then eat dragon whiskers".
Ingredients: 1 fresh carp (weighs about 700 g), 150 g flour
Seasoning: 2 tbsp sugar, 1 tbsp tomato paste, 1 tbsp balsamic vinegar, 1 tbsp water starch, 2/3 tbsp cooking wine, 1 tsp salt, 2 cups salad oil, 1 tsp chopped green onion
Preparation Method:
1. Slaughter the fresh carp, cut off the pectoral and dorsal fins, use a ramp knife to cut corrugated lines on both sides of the fish, add 2/3 small spoons of salt and cooking wine, mix well, and marinate for 10 minutes.
2. Put the flour in the basin, add the remaining salt and appropriate amount of water and form a soft dough, cover with a damp cloth and let it sit for 20 minutes. When awake, pull the dough into a very thin dragon's whisker noodles.
3. Sit in the pan and light the heat, pour in the salad oil and heat it to 40%, fry the noodles in the frying pan and drain the oil.
4. Then soak the carp in hot oil and fry until it is cooked thoroughly, drain the oil, put it on a plate and cover the fried dragon's whisker noodles on the carp.
5. Leave the bottom oil in the pot to heat the heat, fry the chives, sauté the red oil with tomato sauce, add 1/2 cup of boiling water, sugar and balsamic vinegar, boil and adjust the sweet and sour taste, and use water starch to outline the sauce.
6. Pour in 2 tablespoons of hot oil and burst the sauce.
7. Serve on the fish noodles.
Production tips
(1) Add a small amount of ketchup to play a role in color grading. You can also add orange juice to make it yellow, or add soy sauce to make it brownish red.
(2) It is time-consuming to make longsu noodles, and you can choose to use instant noodles or dragon's whisker noodles instead.
(3) When operating with the same pot, you must first fry the dragon whisker noodles, otherwise the color of the dish is not beautiful.
