New broad-spectrum bactericidal bacteriostatic agent - e-polylysine (hydrochloride)

author:Micro Food News

ε-polylysine (ε-polylysine, ε-pl) is a light yellow powder, hygroscopic, slightly bitter, it is not affected by the pH, heat stable (120 °C, 20min), can inhibit heat-resistant bacteria, so it can be heat treated after adding. Combined with hydrochloric acid, citric acid, malic acid, glycine and high-grade fatty glycerides, it has a synergistic effect. ε-polylysine with a molecular weight between 3600-4300 has the best bacteriostatic activity, and when the molecular weight is lower than 1300, ε-polylysine loses its bacteriostatic activity. Since polylysine is a mixture, there is no fixed melting point, and it begins to soften and decompose above 250 ° C. ε-polylysine is soluble in water and slightly soluble in ethanol.

ε-polylysine is a metabolite of Streptomyces albicans. ε-polylysine has obvious inhibitory effects on gram-positive bacteria and negative bacteria, mold, viruses, etc., and has a very good effect on Gram-negative bacteria E. coli and Salmonella bacteria that are not easy to inhibit by other preservatives. Moreover, it also has an inhibitory effect on heat-resistant Bacillus and some viruses, and the bacteriostatic efficiency is high. ε-polylysine is a direct chain polymer of lysine, which can be decomposed into lysine in the human body, which can be completely digested and absorbed by the human body, not only does not have any toxic side effects, but also can be used as a source of lysine, which is a natural, efficient and safe food preservative.

Product Features:

• It can effectively inhibit gram-positive bacteria, gram-negative bacteria, mold and yeast;

• Extended shelf life of food;

• Good thermal stability, non-decomposition at high temperature (120ºc, 20min), can be used before and after product heat treatment;

• The amount of addition is low, and the quality of food can be guaranteed, which saves costs to a certain extent;

• Can replace some chemical preservatives to meet the needs of customers and consumers for natural preservatives.

Scope of application:

ε-polylysine has been approved by the FDA as a safe food preservative in October 2003 and is widely used in food preservation. In food applications, ε-polylysine is mostly used in conjunction with other substances, such as alcohol, organic acids, glycerides, etc. It can be used for preservative preservation of rice, pastries, pastries, sauces, beverages, alcohol, meat products, canned food, etc.

How to use:

It is recommended to use cold boiled water or distilled water to mix this product into a 5-10% solution, and then add food to mix well, and should be added by hierarchical enlargement method to achieve the purpose of uniform mixing. This product can be used in combination with other substances to achieve better results. (Ye Shengde)
