03 Allulose is becoming a "new star" in the market

Allulose, also known as d-allulose, is a rare sugar found in small amounts in plants. In 1940, scientists first found allulose in wheat leaves, and then in fruits (figs, raisins), and the small amount of allulose present in plants is far from meeting the consumption needs of the market. Therefore, researchers continue to try to achieve commercial production of allulose through technology, often through a complex multi-step process. At present, it is more common to obtain low-calorie allulose from the fructose derived from corn starch by enzymatic processing technology.

The sweetness of allulose is 70% of that of sucrose, but it is only 0.4 calories per gram (compared to 4 calories per gram of sucrose), and the overall market demand is large. While allulose is still considered a "carbohydrate" on food labels, it is metabolized in a different way than sucrose and does not raise blood sugar or insulin, so it may be an attractive natural sweetener for blood sugar-conscious consumers.

In the past year (June 2020 to June 2021), many of the world's leading food and beverage brands have added allulose to their products, including chobani and Kellogg's. Kashi go, smart sweets, nick's and magic spoon, among others. For example, chobani launched a zero-sugar yogurt, the main ingredients are ultrafiltration skimmed milk powder, water, allulose, stevia extract, monk fruit extract, citrus fiber, concentrated vegetable juice (coloring), 6 kinds of probiotics, etc., the product flavor is mixed berries, strawberries and vanilla. Only 60 calories per 5 ounces of product, lactose free, and 11-12 grams of protein.

04 The market demand for allulose continues to grow

At present, the global suppliers of allulose mainly include Taylor, Irryan/Matsutani, CJ cheiljedang, samyang corp.

Taylor said that due to the huge market demand at present, the goal is to produce more products as soon as possible to meet the needs of the market. The Taylor plant in the Lauden, Tennessee, USA, currently offers liquid and crystalline allulose, dolcia prima non-GMO crystalline allulose, a natural sweetener ingredient introduced by Taylor, which opens up new opportunities for end-brand owners in applications such as table sweeteners, beverages and confectionery. At the same time, Taylor also said that it is increasing the production and supply of allulose syrup, and actively cooperates with many customers. This syrup form of allulose has a clean and clean taste and can be used in beverages, dairy products, confectionery, nutrition bars and many other product formulations.

In China, the functional sugar representative enterprise Shandong Bailong Chuangyuan has laid out the allulose industry. Bailong Chuangyuan said that with the improvement of global market awareness of emerging sugar substitutes, the sales volume of allulose has increased significantly, and the company's sales in 2020 increased by 1350% compared with 2019. At present, the company is continuously optimizing the production line and adding new production capacity, while at the same time embarking on the declaration of new food raw materials for allulose. After the approval of domestic norms and the liberalization of the market, the raw material may be able to replicate the glory of erythritol.

05 Raw materials for the next sugar substitute market

Among the many sugar substitute raw materials, stevia, monk fruit, erythritol are the raw materials with a wide range of applications, whether used alone or in compound applications. Monk fruit is a noteworthy sugar substitute raw material, with a long history of consumption in China, and the cultivation of raw materials has been expanding in recent years, and the global market is worth looking forward to.

Allulose is currently beginning to heat up in foreign markets, but in China, subject to regulatory restrictions, it is currently not allowed to be used in food production, mainly for export. In addition, tagcorne and l-arabinose are also two promising sugar substitutes. Of course, sugar substitutes are much more than that, monk fructose, stevia, including the previous xylitol are important sugar substitute raw materials. Each raw material is applied in its own application scope to find its own scenario and avoid the homogenization of the market competition.

The development of future technology will always exceed the current human cognition, and in the end, which type of sugar substitute, which type of beverage, which brand will occupy the market, may depend on the superposition of multiple factors.

Bailong Innovation Park has confirmed its participation in the aes2021 Natural Health Products Exhibition on October 20-22, exhibition number b18-5, and will speak in the innovation roadshow section on October 21.
