Cooking Method:
1. Prepare 250g of meat, 1 raw salted duck egg, more than a dozen yaozhu, ginger, soy sauce, raw onion, white pepper, garlic.
2. Yaozhu washed and soaked in water, chopped on the meat filling, raw green onion cut into green onion, green onion leaves and green onion white separated, set aside, garlic peeled and chopped into garlic rice, cut two slices of ginger into fine ginger grains, garlic rice, ginger grains, green onion white on the board after fishing evenly chopped, set aside.
3. After soaking, the Yaozhu is shredded by hand and set aside.
4. Put the shredded Yaozhu, minced ginger and shallot garlic, an appropriate amount of white pepper, a little soy sauce, half a small tablespoon of corn starch, half a tablespoon of peanut oil into the meat filling, wash the salted duck egg and open it, use a tablespoon to put the salted egg yolk, put the salted duck white into the meat filling and other ingredients together clockwise and mix well before putting it on the plate, slightly compact it with the palm of your hand, and then put the salted egg yolk on top of the meat filling.
5. Steamer on the stove, boil water on high heat, put into the steamer steaming for 23 minutes, turn off the heat, two minutes later out of the pot, pour out the excess gravy, keep one-third of the gravy.
6. Continue to boil the water in the steamer on high heat, put the meatloaf on it again, sprinkle with green onion (green onion leaf part), cover the pot for 3 seconds, turn off the heat, and the delicious dishes can be enjoyed. (Note, many people meat cake out of the pot after sprinkling in the green onion can be eaten, my habit is to think that raw onions are raw after all, sprinkled on the fire or steamed for 3 seconds, eat a little more assured)
