During the Hongzhi period of the Ming Dynasty, there was a chef named Li Yushan in Tongzhou Prefecture (present-day Dali County, Shaanxi), who was upright and skilled. Once, the governor wanted to celebrate his fiftieth birthday and asked Li Yushan to cook in the palace. Li Yushan hated the state officials for oppressing the people, so he refused. Soon, Zheng Shi of Futai, Shaanxi Province, came to inspect the Tongzhou capital, and the governor sent someone to find Li Yushan in order to curry favor with Futai. This time, Li Yushan did not refuse. When he brought the dish to the table, Futai pointed to a plate of dishes with meat and bone underneath and asked, "What is this dish?" "Li Yushan said: People don't know, the old masters of our state not only eat meat, but also eat bones!" Zheng Futai heard what was said in the words, and the next day he found Li Yushan to ask about the situation, and then disguised himself as a private visit to find out the evil deeds of the state official, and finally severely punished him. Before Zheng Futai left, he asked Li Yushan the name of the dish, and Li Yushan thought about it and said, "Futai is big."

"Bring an elbow." The elbow with the belt is made of bone-bearing pork front elbow, with more than a dozen spices, first boiled and then steamed, shaped like futon, the color is jujube red, mellow and crispy. In September 2018, the belt elbow was rated as one of the top ten classic dishes in Shaanxi.
