Bagong Town, located in the northern part of Zezhou County, Shaanxi Province, was named after the Spring and Autumn Period because of the Jin Dynasty Gong Xifa Bashu, Qian Bazi here. With a total area of 112.16 square kilometers and a permanent population of more than 50,000 people, it is known as the first town of Taihang.

Bagong Town is rich in green onions, the green onions produced here are large, white and long, the flesh is thick and tender, the texture is fine, known as "Bagong scallions", which is a specialty of Jincheng. According to legend, when Empress Dowager Cixi fled westward, she passed through Zezhou, and local officials solemnly hosted a banquet. But at the beginning of the feast, the chef found that in the panic, he had made one less dish. In order to avoid the scourge of killing, the chef was in a hurry, and immediately took a handful of the scallions on the vegetable case, chopped them up with several knives, burned them into a dish, and served them, called roasted scallions. Who knew that after Cixi tasted it, she was full of praise. As a result, Roasted scallions have become a famous local dish.
The preparation of roasted scallions is quite complicated. Cut the green onion into segments, take only the white onion, pass through the hot water, then pour it into the oil pan and fry it, fry it well, and then cross the water. After stir-frying the pork tenderloin, it is steamed on a plate with green onions, and a historical dish of bagong roasted scallions is ready.
