Some time ago, a friend came to Xi'an for tourism, Xiaoyu accompanied his friend to visit several places where "tourists must punch in", and also went to Huimin Street. At that time, I was walking around the Muslim street with my friends, and in addition to seeing a variety of "net red" foods, I also encountered street foods that were common when I was a child and are not common now, which evoked my memories.
This dish is more magical, its name is not recognized by out-of-town tourists, and locals also read "wrong".
It's just that – the koshiki.
The traditional cuisine of "Koshiki Cake", which has been passed down in the Guanzhong region of Shaanxi Province, has a long history. Simply put, it is steamed on iron dumplings with raw materials such as rice, red dates, and red beans, which are soft and sweet, suitable for all ages.
The word "甑" will be mispronounced by tourists from other places when they see it, but the funny thing is that the Shaanxi people's name is not the correct pronunciation. The correct pronunciation of the character 甑 is "zèng", which is pronounced "jìng" in the Shaanxi western dialect. Therefore, many people will mistake "koshiki cake" as "mirror cake", but in fact, this is not right. Because this word not only shows the long history of the dish "Koshiki", but also shows the special features of its production process.
"甑" is a kind of steamer in ancient China, and a cooking utensil called "鬲" (lì) is often used in conjunction with it. There are many small holes in the bottom of the "koshiki", the food is placed in the "koshiki", the "mane" is poured with water, and then heated with fire and the steam generated in the "mane" is used to cook the food. The principle is probably similar to the steamer we use now.
This kind of steamer has appeared in the late primitive society, and later began to be used in large quantities in the Shang and Zhou Dynasties. I remember that when I visited the Baoji Bronze Museum, I also saw the "Koshiki" and "Mane" made of bronzes.

On Muslim Street, the price of koshiki cake is not cheap, at that time casually asked a shop, a small part of the palm is 10 yuan, and the large part is 20 yuan. On the main street of beiyuanmen, there is a shop that hangs a sign of "Jingyang Dumpling Cake", and suddenly remembered that it was probably because of the TV series about The Year the Flower Bloomed and the Moon Was Round, starring Sun Li before Sun Li, which told the story of Zhou Ying," the richest woman in Shaanxi Province, which just happened to have the plot of Zhou Ying's favorite "Koshiki Cake", the TV series was on fire, and this kind of food was also on fire.
However, for many Shaanxi people, the cake is not sold in the shop, but the street food sold in the car, usually eaten as breakfast. Later, I finally found a cake seller at the morning market near my home, bought a copy, or the familiar sweet taste.
After steaming, the cake looks black and sticky, plus it is a street snack, a large pot in a large aluminum basin, so foreign tourists have a "dirty" feeling when they see the cake for the first time. But in fact it tastes very good, soft and sticky, sweet and delicious. After all, it can be passed down for so long, and its taste must be tested by the public!
If you come to Xi'an for tourism and encounter such a delicacy as koshiki, it is still recommended that you try it. But don't eat too much, because Jiang mi is very full, after all, you still have to keep your stomach to taste other Xi'an specialties!
