Duan Zhangwa, who began to learn the process of making empress cake in her early 30s, is now 66 years old and has formed a love affair with the queen cake for more than 30 years. Duan Zhangwa told us that the processing of the queen cake has to go through four processes: first of all, we must select high-quality pork plate oil, tear off the skin film, sprinkle a little salt, cinnamon noodles, large material noodles, pepper noodles, smash them into a sludge with the back of a knife, turn the fine white noodles and water into dough, roll out long squares, spread the oil sludge evenly on it, roll it into a circle, rotate it to make a round cake, then use honey to hydrate, smear it on the round cake, sprinkle a layer of black and white sesame seeds, and then bake it into the oven to make a golden brown.
