Teochew people's New Year essential kway teow - "rat shell kway"

The official name of "rat shell kun" is "rat shell kun", which is called "rat shell kun" in our local area, because of the harmonic sound of Teochew dialect. It is a must-have product for worshipping the gods at the end of the chaoshan region, and it is also a sweet, soft and delicious dessert.

The general production process: the skin is made of sticky rice flour and rat koji, so the appearance is dark brown. The filling is generally based on mung beans or taro puree with related condiments, wrapped in skin, kneaded into an irregular circle (similar to northern dumplings), and then pressed and molded by mold, placed on banana leaves, and sent to a steamer basket for steaming.

This is our own freshly caged "rat shell kun"
