1 bowl with a small half bowl of regular flour and set aside.
2 Wash the crabs with a small brush, wash them several times, then cut everything in two, pick up the crab bun and crab intestines, and put them in the flour.
3 Prepare a handful of spring onions cut into green onions, sliced ginger, like spicy can add a little pepper, set aside.
4 Heat the oil and fry the crab in a pan, cutting the noodles downwards, at which point the crab feet are still shaking. (Be sure to eat and kill now, this is the trick) Then add chopped green onion, ginger slices, salt, drizzle into cooking wine, drizzle into fresh soy sauce, do not fry for too long, too long will burn, add water no more than crabs, bring to a boil over high heat, turn to low heat.
5 Stir the remaining flour in a bowl with water until thin batter, turn heat to high heat, pour in batter and add some chicken essence before cooking.
6 A fragrant noodle crab can be served.
