Aiming at the theoretical problem of how AFPs regulate the structure of the ice-water interface layer, this paper analyzes and discusses several typical AFPs theoretical mechanism models, and reveals the principle of combination or interaction between AFPs and ice crystals by regulating the formation of ice-water interface layer structure and its driving force, so as to provide a theoretical reference for the in-depth analysis of the antifreeze activity mechanism of AFPs, its screening, and its application in the food industry.   Antifreeze proteins (AFPs), also known as ice structure proteins or ice binding proteins, are a class of proteins that control the growth of ice crystals and inhibit the recrystallization of ice crystals, and protect organisms from damage under ice or sub-icing conditions. However, due to the complexity of its type and structure, how to regulate the structure of the ice-water interface layer in the freezing environment, and in what way it combines or interacts with ice crystals to achieve its inhibition of ice crystal growth, thermostatic activity and recrystallization inhibition activity have not been clearly and systematically resolved.

  "Research Progress on the Theoretical Mechanism of Interaction between Antifreeze Protein and Ice-Water Interface Layer" reviews relevant research at home and abroad, and reveals the characteristics of AFPs by regulating the structure of the ice-water interface layer by regulating the binding or interaction driving force of the adsorption-inhibition model, dipole-dipole model, crystal occupancy-lattice matching model, rigid body energy model, clathrate anchoring model, affinity interaction coupling agglomeration model, etc. The main modes of action and mechanism of AFPs in generating thermal stagnation activity and recrystallization inhibition activity are analyzed, which provides new ideas for the research and industrial application of antifreeze protein.
