Method/step
In the first step, wash and peel the eggplant, cut into large coarse strips, wash and cut the green onion into sections, finely chop the ginger and set aside.
In the second step, heat peanut oil in the pan, add eggplant strips, fry until golden brown, and set aside.
In the third step, pour peanut oil into the pot and heat it, add ginger, minced meat, eggplant, chicken broth, salt, monosodium glutamate, sugar, soy sauce, and simmer until the juice is thick.
