Guanzhong and Xi'an oil tea are diverse, and there are many precious varieties, which deserve a big book.
Pot of oil tea. Popular in Baoji. The method is to stir the flour, blended noodles with cold water into a thick paste, slowly pour in the pot of boiling water and stir well, add almonds, sesame seeds, soy sauce, salt, pepper, monosodium glutamate, etc., use the low heat to burn while stirring, after about twenty minutes, the color becomes sauce yellow and cooked. Then put it in a large copper pot, place it on the stove, and pour it into a small bowl while drinking. There were special hawkers in the old market. Pimple oil tea. Xi'an Hui flavor snacks. Generally, oil tea is based on thin and uniform thickness, no knots, this oil tea does the opposite, but put up a "I have knots" flag. This knot is the size of a cherry, the texture is crisp and loose, it can be dissolved in the mouth, and its aroma, in Shaanxi dialect, is called "Tsuen". Three crude oil teas. Sanyuan used to be an important cultural town in Shaanxi and an important commercial port in Shaanxi, so food snacks and food culture have great characteristics.
