Shouyang Tofu Mind is a dish made from fresh tofu, eggs and other ingredients. Coupled with flat food, it is simply a human delicacy.

Shouyang's mind is bright in color, rich in flavor and sweet, fragrant with wine, rich in nutrition, healthy spleen and warm stomach. When it comes to the mind, people who know it refer to Qing Heyuan's "Eight Treasures Soup", but Shouyang also has a brain, so little is known. Shouyang's mind is usually made only when eating flat food (dumplings) in the New Year, so some people also combine the head flat food to become a special snack in Shouyang.
Every New Year, every family will eat a flat meal (dumplings), and the essential thing is to accompany a pot of brains. This kind of mind is different from the Taiyuan mind, and there is no meat, lotus root, long yam and Chinese medicinal herbs. The specific method is: first cut the tofu into small cubes, then peel the potatoes and cut the same small squares, fry the two things with oil; pour in a little white wine, slow cook half cooked, add the appropriate amount of brown sugar, and later beat the eggs well into the pot; add water starch when it is almost cooked, and cook it for a while to eat.
Preparation method: Cut the tofu into chopsticks, put it into a hot oil pot and sauté until the tiger skin color, add brown sugar to continue frying, then add 1.5 kg of minced ginger and water and soak soft noodles, white fungus to boil, use wet starch to outline, and then take a small bite of the egg, slowly flow the egg liquid into the pot, require the egg slices to be yellow and white, sprinkle with spinach leaves, and drop into the fenjiu.
